    Every time I go to Mobile, I like to stop by my favorite place to buy produce - Old Shell Market

    I'm obsessed!

    Everything is just so inexpensive {compared to most grocery stores}. It's the way all produce should be!!

    I always stock up on onions, bell peppers, avocados, lemons & limes, and whatever fruit is in season

    Without fail, I always spend about โ…“ of what I'd spend if I bought that much at a grocery store.

    68¢ for a red or yellow bell pepper? I'll have 6.

    Strawberries for $1.50 a pint? Gimme 4.

    Avocados for 50¢? I need at least 2, if not more. I love avocado. I always need avocado. It's just the greatest. The greatest on food, in food, with food, everything!

    Plus, they are super duper healthy. I love when good food is healthy. That makes this lady very happy.

    On my last trip, I bought produce for both my sister and me.

    I bought us each 2 avocados.

    Or so I thought...

    As I was unloading my groceries when I got home, I realized that I only had one avocado.

    I can't decide what was more upsetting: the fact that there is potentially an avocado rotting in my car or that I had multiple plans for my two avocados and only had one...

    I think I'm more upset about the fact that I wanted to make at least 3 different things with my avocados and had to decide on one thing. I was really looking forward to a fresh batch of avocado hummus or maybe some avocado pudding, but alas, I decided on trying something new - this dressing.

    And I have to admit that I'm pretty darn glad I did. This stuff is deeeeeeeeeeeeelicious

    It's really good on salad. It's really good straight from the jar. It's just really good.

    I highly suggest doubling the recipe because it only makes one cup. And since this stuff is so amazing, I made the serving size for ยผ cup.

    By the way, there's over 4g of fiber in a serving of this dressing! Whoop whoop

    Oh and if you're curious about my salad {which you should be because it was awesome}, here's what it is: roasted yellow bell pepper, black beans {from a can}, cherry tomatoes, and feta or cotija cheese. Then I smothered it in dressing.

    I could eat this every day.

    Ingredients

    • 1 avocado
    • ยฝ cup cilantro
    • 1 clove garlic minced
    • 1 tablespoon lemon or lime juice
    • 2 teaspoon apple cider vinegar
    • ยผ teaspoon salt
    • โ…“ cup water
    • 1 tablespoon olive oil

    Instructions

    • Add all ingredients to a food processor or blender, and blend until smooth. Add more water if desired to thin the consistency.

      Hello!
      I have really enjoyed your website. The Avocado Cilantro Dressing looks wonderful. However, I would like to know if there is a replacement for the apple cider vinegar?? We can't have it in our diet:( If you know of an alternative that would be great!

        Thanks so much Heather! You could definitely omit the apple cider vinegar! You could use extra lime or lemon juice or water. Hope that help! Cheers ๐Ÿ™‚
