Avocados for 50¢? I need at least 2, if not more. I love avocado. I always need avocado. It's just the greatest. The greatest on food, in food, with food, everything!
Plus, they are super duper healthy. I love when good food is healthy. That makes this lady very happy.
On my last trip, I bought produce for both my sister and me.
I bought us each 2 avocados.
Or so I thought...
As I was unloading my groceries when I got home, I realized that I only had one avocado.
I can't decide what was more upsetting: the fact that there is potentially an avocado rotting in my car or that I had multiple plans for my two avocados and only had one...
I think I'm more upset about the fact that I wanted to make at least 3 different things with my avocados and had to decide on one thing. I was really looking forward to a fresh batch of avocado hummus or maybe some avocado pudding, but alas, I decided on trying something new - this dressing.
And I have to admit that I'm pretty darn glad I did. This stuff is deeeeeeeeeeeeelicious
It's really good on salad. It's really good straight from the jar. It's just really good.
I highly suggest doubling the recipe because it only makes one cup. And since this stuff is so amazing, I made the serving size for ยผ cup.
By the way, there's over 4g of fiber in a serving of this dressing! Whoop whoop
Oh and if you're curious about my salad {which you should be because it was awesome}, here's what it is: roasted yellow bell pepper, black beans {from a can}, cherry tomatoes, and feta or cotija cheese. Then I smothered it in dressing.
I could eat this every day.
Avocado Cilantro Dressing
Ingredients
- 1 avocado
- ยฝ cup cilantro
- 1 clove garlic minced
- 1 tablespoon lemon or lime juice
- 2 teaspoon apple cider vinegar
- ยผ teaspoon salt
- โ cup water
- 1 tablespoon olive oil
Instructions
- Add all ingredients to a food processor or blender, and blend until smooth. Add more water if desired to thin the consistency.

I have really enjoyed your website. The Avocado Cilantro Dressing looks wonderful. However, I would like to know if there is a replacement for the apple cider vinegar?? We can't have it in our diet:( If you know of an alternative that would be great!
