Avocado makes this pudding rich and creamy but you'll never know it's in there. It's no cook and has only 5 ingredients
I'm back from my spring break. It was quite nice, but being gone for 10 days makes it really hard to go back to regular life.
I sure will miss waking up at 9 and watching Band of Brothers marathons all day just because I can...
But I did get some work done while I was gone. My grandmother and I tested 4 recipes for the cookbook we are working on together.
It took 7 hours ~ 3 successful recipes + pictures and one failed recipe {two attempts. Hopefully, the third time's the charm}
Yes, you read that correctly... 7 hours for 3 recipes. Cookbook making is hard work, I tell you. Hard hard work...
However, this pudding... not hard work. Not at all
It has 5 ingredients and takes less than 5 minutes to make.
I love it because it's one of those recipes that's trickable {that's a word in my book}. You have no idea there's avocado in there. No idea at all.
The avocado only lends its rich and creamy qualities to the pudding. Don't even tell people it's made with avocado until after they've devoured it and there's chocolate all over their face.
I keep finding avocados on sale, and this is an excellent way to use them. You might even have the other ingredients already in your pantry.
It's great for kids who refuse to eat healthy or those with a dairy allergy or just someone looking for a creamy, chocolaty treat without all the strange ingredients you get from most store-bought pudding.
I think this pudding is best eaten the day it's made because it turns a slightly grayish brown color after a day, but it's still just as good.
I prefer honey to maple syrup because I felt like the pudding had a pretty evident maple syrup flavor. I like maple syrup but the honey made it taste more like normal pudding.
Also, feel free to add some toppings like crushed chocolate cookies or coconut flakes.
Avocado Pudding
Ingredients
- 1 small avocado
- 3 tablespoon cocoa powder
- 1 teaspoon vanilla extract
- 3 tablespoon honey or maple syrup
- ยผ teaspoon salt
Instructions
- Add all the ingredients to a food processor in the order listed, starting with the avocado and ending with the salt.
- Blend until completely smooth. If it is too thick for your taste, add a little milk or water {tablespoon at a time} until it reaches your desired consistency.
