Enjoy the classic breakfast pair of pancakes and bacon in these high-protein pancakes that are low in sugar and can be gluten-free.

I interrupt my regularly scheduled program of crock pot week to bring you the perfect snow day pancake recipe {or half birthday breakfast}: Bacon Protein Pancakes!
It was only a matter of time before I ended up doing this... combining two of my most favorite/most talked about things: bacon + protein pancakes.
The result? Nothing short of sheer genius. Breakfast heaven on earth. Hallelujah {side note: hallelujah is a tough word to spell, no?}
But yeah, so I decided to add bacon, one of my all-time favorite things ever, to my beloved protein pancakes.
I really really enjoyed these, but I pretty much assumed I would. Pancakes and bacon are a glorious breakfast combination.

Since it's snowing everywhere {but here}, that means you likely have the day off to make pancakes. I recommend making a big batch and then reheating them in the morning during the rest of the week. Seriously, take the extra time to make these pancakes. You'll thank yourself come breakfast time.
Someone the other day made a comment that they never make my protein pancakes because they don't like leftover pancakes; however, they eat frozen waffles for breakfast. I beg you to tell me the difference...
I suggested that they freeze the leftover pancakes, and then they'd be just like those {not at all good for you} frozen waffles they eat every day.
It'd be sad to live a life without the most perfect breakfast pair ~ pancakes and bacon. Luckily, you don't have to!
These protein pancakes are packed with fiber, protein {obvi}, and bonus: they can be gluten-free. Just make sure you use gluten free oats if necessary.
Bacon Protein Pancakes
Ingredients
- 1 ยฝ cup oats {regular or quick not instant}
- 6 eggs
- 1 ยฝ cups cottage cheese
- 1 ยฝ teaspoon baking powder
- 2 tablespoon maple syrup
- 1 teaspoon vanilla extract optional
- 6-8 slices cooked and crumbled center cut bacon
Instructions
- Add all of the ingredients except the bacon to a food processor or blender. Blend until completely combined and smooth. Let sit for at least 5 minutes. Stir in cooked bacon.
- Heat a large non-stick skillet or griddle over medium heat.
- Add pancake batter to skillet or griddle {the recipe makes about 12 pancakes}. Cook for about 3-4 minutes or until tiny bubbles form on the top of the pancake.
- Flip and cook another 2-4 minutes until done.
- Serve with a little real maple syrup and/or a small pat of butter.
