Enjoy the classic breakfast pair of pancakes and bacon in these high protein pancakes that are low in sugar and can be gluten free
I interrupt my regularly scheduled program of crock pot week to bring you the perfect snow day pancake recipe {or half birthday breakfast}: Bacon Protein Pancakes!
It was only a matter of time before I ended up doing this... combining two of my most favorite/most talked about things: bacon + protein pancakes.
The result? Nothing short of sheer genius. Breakfast heaven on earth. Hallelujah {side note: hallelujah is a tough word to spell, no?}
But yeah, so I decided to add bacon, one of my all-time favorite things ever, to my beloved protein pancakes.
I really really enjoyed these, but I pretty much assumed I would. Pancakes and bacon are a glorious breakfast combination.
Since it's snowing everywhere {but here}, that means you likely have the day off to make pancakes. I recommend making a big batch and then reheating them in the morning during the rest of the week. Seriously, take the extra time to make these pancakes {or any of these, for that matter}. You'll thank yourself come breakfast time.
Someone the other day made a comment that they never make my protein pancakes because they don't like leftover pancakes; however, they eat frozen waffles for breakfast. I beg you to tell me the difference...
I suggested that they freeze the leftover pancakes, and then they'd be just like those {not at all good for you} frozen waffles they eat everyday. Ha
I doubt you'll think twice about eating "leftover" pancakes when you make these babies. Yes, I know bacon is not an everyday food; it's a sometimes food. But a little bit goes a long way; you are only using 6 slices of bacon for the entire recipe {serves 6}.
It'd be sad to live a life without the most perfect breakfast pair ~ pancakes and bacon. Luckily, you don't have to!
These protein pancakes are packed with fiber, protein {obvi}, and bonus: they can be gluten-free. Just make sure you use gluten free oats if necessary.
