Juicy blueberries, muddled mint, fresh squeezed lime juice, a dash of sugar, club soda, and rum make this fabulous warm weather drink

Hi there readers. No I haven't forgotten about you. I've been working on a few projects that I'm really excited about that involve major kitchen time.
And honestly, after cooking 4+ things each day for the past 5 days, I just didn't have it in me to write a post. I beg your pardon.
But I have Blueberry Mojitos today, so that should make up for it! I just know it will 😉

I am a berry freak. I love them. Love love love them!
And apparently, I also like to make drinks.
I'm not sure why, but making drinks is really fun to me. Whether or not there is alcohol in there doesn't matter, but I just love making drinks.
I made these Blueberry Mojitos yesterday and then drank them with my friend as we strolled around Audubon Park. It. was. glorious.
Juicy blueberries, muddled mint, fresh squeezed lime juice, a dash of sugar, club soda, and rum {optional} make this fabulous drink.
I had a sweet batch of blueberries since it is blueberry season {wooohhoooooo!!!!}, and they barely needed sugar. Most recipes call for at least 2 teaspoons of added sugar but I found that completely unnecessary. I used less than ยฝ teaspoon and found it to be perfect {however, I calculated the nutrition facts with ยฝ teaspoon just for good measure}
Frozen blueberries that have been thawed would be a good substitute in a pinch, but you might have to add more sugar.
I made two versions: one with rum and one without. Both were delish!
I used La Croix in my version without rum to give it a little extra flavor but it's refreshingly tasty with just club soda. I just happened to have some La Croix and thought it would taste really good {I was right, obviously}
The recipe makes one serving since you make these individually. I think I might have to work on a recipe for a big batch because they are that good, and you're going to want more than just one.
It takes about 2 or 3 minutes to make each one. Not a lot of time but a little more time-consuming than your average mixed drink. It's totally worth the extra 120 to 180 seconds though!
Blueberry Mojitos
Ingredients
- ยฝ cup blueberries
- 10 mint leaves
- ยฝ teaspoon granulated sugar optional
- 2 tablespoon lime juice about 1 lime
- ยผ cup light rum 2 oz.
- ยฝ cup club soda 4 oz.
Instructions
- Add the blueberries, mint, and sugar {if using} to a glass. Muddle the mind and blueberries together to release the juices of the blueberries and flavor of the mint.
- Stir in lime juice and rum {if using}. Fill the glass with ice and top with club soda.
