These boozy Mardi Gras cupcakes are a fun and festive treat for the Carnival season
Oh Boozy Mardi Gras Cupcakes, how I love thee...
There's not too terribly much to say about these cupcakes other than that they are an excellent Mardi Gras dessert.
They're festive -- just look at that purple, green, & gold! They're boozy {amaretto-spiked batter and icing}, and they're perfect for a Fat Tuesday feast.

I haven't made cupcakes/cake/cookies in a while, so I didn't realize that I was completely out of all-purpose flour and only had white whole wheat, which meant that these cupcakes ended up being unintentionally 100% whole wheat.
Despite being 100% whole wheat, please do not assume that these are a "healthy" dessert just because I typically post recipes that are nourishing for your body.
These are cupcakes with a teeny bit more fiber because I accidentally used whole wheat flour.
I don't believe in deprivation and I say live it up, especially on a holiday called "Fat Tuesday"
These aren't something you'll eat on the reg, but man oh man are they tasty!
These tasty cupcakes are flavored with alcohol, hence the title "boozy"
I love amaretto. It's an almond liqueur, and it's incredibly tasty. However, you are free to use whatever liqueur you want. Kahlúa would be delightful in these cupcakes I imagine. Or make these without the alcohol and substitute with an equal amount of milk and some vanilla extract for extra flavor.

Boozy Mardi Gras Cupcakes
Ingredients
For the cupcakes
- ยผ cup butter room temperature
- ยผ cup plain Greek yogurt
- 1 cup sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 tablespoon amaretto
- 1 ยฝ cup white whole wheat flour or all-purpose flour
- 1 ยผ teaspoon baking powder
- ยฝ cup milk
- food coloring purple {or blue + red}, green, and yellow
For the frosting
- 2 tablespoon butter room temperature
- 2 cups powdered sugar
- ยผ cup amaretto or 3 tablespoon milk + 1 tablespoon vanilla extract
Instructions
For the cupcakes
- Preheat the oven to 350°F. Line a cupcake pan with cupcake liners or lightly spray with oil; set aside.
- In the bowl of a stand mixer, cream together the butter, yogurt, and sugar. Add in the eggs, vanilla extract, and amaretto. Mix until completely combined.
- Add in flour and baking powder. Mix on low until half-way combined. Add in milk, and mix on low just until combined {do not over mix!}
- Separate the batter into three bowls and color one bowl purple, one yellow, and one green. Pour the batter into the prepared cupcake pan, one color at a time. Do Not Stir! {the batter should fill each cupcake spot about โ full}
- Bake until done {when a toothpick inserted in the center comes out clean}, about 20 to 25 minutes. Let cool completely before frosting.
For the frosting
- Add the butter, powdered sugar, and amaretto to a mixing bowl and beat on medium until fluffy. Add more amaretto or powdered sugar if desired.
- Frost the cooled cupcakes with the icing.
