    A burger for breakfast?

    Yep, that's exactly what I'm suggesting.

    Have I gone mad? Nope. I'm a genius.

    Why can't you have a burger for breakfast? You can eat pizza for breakfast. I've even had pasta for breakfast. So why not enjoy a burger for breakfast?

    What makes a burger fit for a meal to start your day?

    Lots of reasons. Let me explain...

    Beef is packed with vitamins and minerals your body needs like Vitamins B6 & B12, Riboflavin, Selenium, Niacin, Zinc, Iron, Phosphorous, and Choline.

    Beef is a great source of protein, and there are lots of lean beef cuts. My favorites include ground sirloin, flank steak, and pot roast. Fun fact: some cuts of lean beef are even leaner than poultry.

    Starting your day with protein is one of the most important things in my opinion. I love breakfast but it's got to have protein or I'll be hungry in 30 minutes. I don't do well hungry.

    But this Breakfast Burger will leave you far from hungry. You'll feel satisfied with lasting energy.

    This burger kept me full (without feeling stuffed) and satisfied all morning long [Insert party popper emojis here]

    If you ever have breakfast and then start reaching for your lunch before 10am, you might want to consider including more protein in your breakfast. And I may or may not be partial, but I recommend you add this Breakfast Burger to your morning repertoire.

    It takes about 10 minutes of prep time and everything is done in the oven on the same pan (woohoo for less cleanup!)

    You start by roasting tomatoes (gotta have produce to start our day!). Then shape the ground beef into patties. One pound makes four burgers. You will put these in the oven, so to prevent them from shrinking and overcooking, you want to make them really thin and flat and wider than you would if you were grilling them.

    Then you bake the burgers to your desired doneness. I personally add a little cheese right before it comes out of the oven.

    While all that's cooking, go ahead and fry an egg to put on top. Clearly, I am a horrible egg fryer as evidenced by these photos, but it doesn't matter since it's smashed between the bun. It's just there for taste not looks, luckily.

    Once the tomatoes and burgers are done, toast your buns and put a few tomatoes down, top with a burger, and finish off with the egg. Then, the best part, enjoy!

    These really are a fun way to start your day -- you know you'll stay satisfied and full (but not stuffed) all morning, and who doesn't want to eat a burger at breakfast?!

    Ingredients

    • 4 roma tomatoes cored & quartered
    • 1 teaspoon olive oil
    • ยผ teaspoon salt divided
    • 1 pound lean ground beef I used ground sirloin
    • 1 tablespoon Worcestershire sauce
    • 2 ounces cheddar sliced, divided
    • 4 large eggs
    • 4 whole grain hamburger buns toasted

    Instructions

    • Preheat the oven to 450*F. Line a baking sheet with foil.
    • Add the tomatoes to the one side of the baking sheet and toss with olive oil and โ…› teaspoon salt. Roast for 20 minutes.
    • Meanwhile, mix together the lean ground beef, Worcestershire sauce, and remaining โ…› teaspoon salt. Shape into 4 very thin patties. Place patties onto other side of the baking sheet. Roast for another 8-12 minutes depending on desired doneness. Remove from oven and top each burger with ยฝ ounce cheese.
    • Meanwhile, fry your eggs until desired doneness and set aside.
    • When ready to eat, put about 4 tomato slices onto the bun, top with the burger, put the egg on top, and cover with the bun. Enjoy!

    Notes

    *While the nutrition content may seem on the higher end, remember that this is a full meal -- a really filling and satisfying burger. You can always make this a bun-less (or use only one half of a bun) to reduce calorie/carbohydrate content.
