About Breakfast Pizza
If you're a bacon and eggs for breakfast type of person, then this breakfast pizza is 100% for you!
It tastes like a scrambled egg/omelet on top of a pizza crust with a little pizza flavor from the oregano. And it's bursting with bacon flavor {best part...duh!}
When I was like 10 and we went to Disney World, I remember eating breakfast with the Disney characters, and we had breakfast pizza.
Apparently, it has been on my mind ever since - even to the extent that when I see it in a gas station sitting under one of those nasty heat lamps, I think "yum, breakfast pizza!"
{I would like you to know that I have never, ever once eaten a piece of breakfast pizza from a gas station, no matter what state of mind I was in!}
Gas station pizza and Disney World aside, this pizza is really good. Really really good.
It's good hot, cold, room temp, whatever. It looks delicious {as long as you don't keep it under heat lamps a la the gas station} and it's a great way to get in some veggies first meal of the day
I promise it's worth the effort to cook the bacon, then sauté the veggies in {a little} bacon grease, then whisk some eggs and assemble to pizza
It would be good served with warm pizza or marinara sauce, but I used salsa {because salsa is good with everything in my opinion}
The recipe is for 6 and makes two pizzas, but even if you don't need to serve that many, you should totally make the entire recipe and save the leftovers for that week. Or freeze the leftovers.
I pre-baked the pizza dough the day before, so I wouldn't have to make the pizza dough the morning of.
Alternatives
Feel free to use either pre-made pizza dough, make your own pizza dough, or use already prepared pizza crusts (like Boboli and Mama Mary's).
You basically just want 16 oz. or 1 lb. pizza dough or crust. And you want it to be whole wheat, please.
Also, feel free to add any vegetables you like. I probably would have put mushrooms on there too if I had remembered to buy some...
Breakfast Pizza
Ingredients
- 6 oz center-cut uncured bacon {about 8 slices}
- 2 medium onions diced
- 2 medium bell peppers diced
- 1 lb whole wheat pizza dough or 2 whole wheat pizza crusts
- 4 large eggs divided
- 4 tablespoon milk divided
- 8 oz cheddar cheese shredded
- 1 teaspoon oregano
- pizza sauce or salsa for serving, optional
Instructions
- Preheat the oven to 425°F.
- Cook bacon over medium heat until crispy. Drain on paper towels to absorb excess grease.
- Carefully wipe most of the bacon grease out of the skillet {leave about 1 tablespoon in skillet}, and saute onions & bell peppers until softened, about 7 minutes.
- Shape the pizza dough into two 10-12 inch circles. Sprinkle baking sheets with cornmeal, and put pizza dough on baking sheet. Pinch the edges of the pizza dough to make a crust {so the eggs won't spill out}.
- If you like crispy pizza, bake the pizza crusts without any toppings for 3 minutes, but this is optional.
- Sprinkle half of the cheese over the bottom of the pizza crusts/dough. Whisk together 2 eggs and 2 tablespoon milk. Carefully pour over one pizza. Repeat with the remaining 2 eggs and 2 tablespoon milk and pour over other pizza.
- Evenly sprinkle with bacon and sauteed vegetables. Sprinkle with the oregano and remaining cheese.
- Transfer to preheated oven and bake for about 10-15 minutes depending on how cooked you like your eggs.
- Serve with pizza sauce and/or salsa.
