This is one of those meals that I love when I'm feeling lazy, don't want to go to the store, and want dinner in like 15 minutes without much work.
It's also super cheap and healthy.

I based my recipe off this one from Hungry Girl. I have been making this Broccoli Slaw Spaghetti for quite a while now. It was a staple in my diet when I was in my dietetic internship and made absolutely no money {working without pay while in grad school is awesome...not}.
I still love this Broccoli Slaw Spaghetti and make it often when I'm not experimenting in my kitchen with new recipes for my blog.
You can eat it for lunch or dinner. Broccoli Slaw Spaghetti is really filling and packed - packed! - with veggies. It's basically just veggies and some cheese.

Now, I'm not gonna pretend that this tastes just like real spaghetti... ha it definitely doesn't, but it's still really tasty. I promise. I mean, if it wasn't, I wouldn't keep it in my regular rotation of things I make often.
I have to be very selective for my "regular rotation" foods since I feel like I always need to experiment.
My "regular" foods usually involve some sort of protein pancake {usually oven baked}, a salad or soup, and easy/quick/really healthy meals like this Broccoli Slaw Spaghetti {or Balsamic Chickpeas & Spinach}.
The recipe serves one but is easily doubled.
It's a pretty big serving, so you could make the recipe as written and serve it as a side dish with some chicken or something for a substantial, filling, and healthy meal.

Broccoli Slaw Spaghetti
Ingredients
- 1 teaspoon olive oil
- 2 ยฝ cups broccoli slaw about ยฝ of 12 oz. package
- ยผ teaspoon garlic powder
- ยฝ teaspoon Italian seasoning no salt added
- 2 tablespoon water
- 8 oz tomato sauce no-salt-added
- ยฝ teaspoon sugar
- โ teaspoon salt
- ยผ cup shredded mozzarella cheese
- ยผ cup shredded parmesan cheese optional
- 1 teaspoon chopped fresh basil optional
Instructions
- Heat oil over medium-high heat in a medium skillet. Add broccoli slaw. Saute for 2 minutes.
- Add garlic powder, Italian seasoning, water, tomato sauce, sugar {if using}, and salt. Stir well. Bring to a simmer and lower heat to medium-low. Simmer for about 10 minutes, stirring occasionally.
- Remove from heat. Stir in mozzarella. Plate spaghetti, and sprinkle with Parmesan and basil {if using}. Enjoy!

What type/brand of broccoli slaw are you using to get 14g of fiber?

I just recalculated the nutrition facts and it must have been a typo because the total is for 9.8g fiber. So sorry about that! Thanks for bringing it to my attention!
I use the bagged broccoli slaw that I get at Walmart or Rouse's.

33.7 g for one dish would not be "low carb". But it seems wrong anyway. How did you get that number?

You are correct, and I edited that. However, I double checked and it is 33g carbohydrates (from the natural sugars in the tomato sauce). I use a nutrition calculation software, FoodCare. Thanks for your input!!

Hmmm...most labels I see for tomato sauce (or pasta sauce, without added sugar) report lower than that. Even Hunt's tomato sauce in that amount only has 8 g of carbs (net 6).

No, that's correct! It's just that you are using all 8 ounces, so it adds up (about 15g carbs from the tomato sauce). Plus, the broccoli slaw has about 14g carbs for 2.5 cups. Then there's about 2 grams from the added sugar. So it adds up to about 30-ish grams. Hope that helps!

Ok sorry my math was wrong. However, I still think you can do better with the sauce. I have a jar (Organico Bello Marinara) for example that's only 10g per 8oz.
