    Who doesn't love summer with the overflowing amount of amazing fresh produce?!

    Take advantage of all those fresh tomatoes with this super simple side dish or appetizer.

    This is one of those recipes that you don't really even need a recipe for.

    And it's only 5 ingredients: tomatoes, Dijon mustard, whole wheat bread crumbs, Italian seasoning, and Parmesan cheese. Ingredients that I almost always have in my kitchen.

    I don't remember where I got the recipe, but it's too easy, quick, and delicious to not share with you.

    Broiled Parmesan Tomatoes from Living Well Kitchen

    I know it's hot outside, so you're probably not dying to turn on the oven. But for these, you just need to turn the broiler on and broil them for about 4 minutes. Careful because the breadcrumbs will burn pretty fast.

    Honestly, I don't have much else to say about this recipe. The fact that you can make these from start to finish in under 15 minutes should be reason enough to make these. Add in the fact that they look and taste great, and I think you'll want to run out and grab some tomatoes if you don't have some already.

    I always keep Parmesan cheese, Dijon mustard, Italian seasoning, and bread crumbs in my kitchen, so it's one of those side dishes that can almost be an afterthought when you realize you need some extra veggies/color to your plate. I know I know, tomatoes are technically a fruit but I consider them a veggie so whatev.

    Ingredients

    • 2 tomatoes
    • 1/4 cup whole wheat bread crumbs
    • 1/4 cup shredded Parmesan cheese
    • 1 teaspoon Italian seasoning
    • 4 teaspoon Dijon mustard

    Instructions

    • Cut tomatoes in half. Turn cut side down onto a paper towel lined plate and let sit for about 10 minutes.
    • Preheat broiler. Stir together bread crumbs, Parmesan, and Italian seasoning. Set aside.
    • Turn the tomatoes cut side up and put on a baking sheet {I like to line the baking sheet with foil for easier clean-up}. Spread each tomato with a teaspoon of Dijon mustard. Sprinkle bread crumb-cheese mixture over each tomato half.
    • Broil for about 3-4 minutes, watching carefully so bread crumbs don't burn.
