You'll happily eat your veggies with these flavorful Carrot Fries. Great for an Easter side or any springtime meal
I'm always looking for ways to get people to eat more veggies.
I'm also always trying to find a way to enjoy the food I eat.
And like most people, I love fries. Love love love 'em.
I was craving salty and crunchy but wasn't really in the mood for potatoes... Then I remembered that I recently bought a 10 pound bag of carrots from Costco and decided I could roast them with some spices and call them carrot fries.
So I did, and then I stuck them in the oven, forgot to set a timer, left my kitchen, and then burned them. Drats...
Good thing I had 8 more pounds of carrots, or I would have been terribly sad. [Don't worry, I still ate the burned ones.]
For my second batch, I actually used my kitchen timer and they turned out brilliantly.
I know this isn't a novel idea, but the fact that I could eat an entire pan of "fries" and be filling my body with lots of veggies was quite wonderful.
I am not a potato avoider; in fact, I think potatoes are great - both white and sweet.
But let's change it up with carrots.
Carrots are nutritional stars. They are packed{!!!} with Vitamin A and are a good source of Vitamin K, Vitamin C, Potassium, Vitamin B6, biotin, manganese, fiber, and tons of phytonutrients.
These would be a great side dish for an Easter meal since carrots are synonymous with spring and Easter. Or just make these anytime of year when you want your family to happily eat their veggies
Just a little note: these aren't going to the same texture as a regular french fry -- they are baked carrots. But they do have a similar feeling; however, you might want to broil or increase the temperature at the end of cooking to make these extra crispy.
Carrot Fries
Ingredients
- 2 lbs carrots scrubbed and peeled if desired
- 1 tablespoon olive oil
- ยฝ teaspoon garlic powder
- ยผ teaspoon salt
- ยผ teaspoon paprika
- โ teaspoon cayenne pepper
Instructions
- Preheat the oven to 425°F. Line a baking sheet with foil or parchment. Set aside.
- Slice carrots into even-sized slices. Toss with olive oil and spices. Transfer to foil-lined baking sheet.
- Bake in preheated oven for 10 minutes. Carefully stir the carrots and return to oven. Bake another 10-15 minutes until carrots of roasted. Feel free to broil for a few minutes to get an even crispier texture to your carrot fries.
- Serve with ketchup or other sauce if desired. Enjoy!

I eat a ton of sweet potato fries, but have never tried carrot fries before! I, too, have a huge bag of carrots in the refrigerator, so I'll have to shake things up and give these a try soon!

Tried the carrot fries. Hubby thought I was nuts. After watching him picking up a stick at a time, going non stop.....he realized how wonderful they were. Asked if we had any more carrotts in the house. Lol. He is diabetic, so this was a very tasty alternative to French fries. Much healthier too.
