Chicken, Spinach, and White Bean Soup
Ingredients
- 2 cups water
- 4 cups chicken broth or vegetable broth
- 2 cups pasta sauce any kind or pizza sauce
- 15 ounce can white beans drained & rinsed
- ยฝ teaspoon red pepper flakes
- 1 pound chicken breast cut into 1" pieces
- ยผ teaspoon salt
- 5 oz fresh spinach about 6 to 8 cups
- ยฝ cup fresh basil chopped
- ยฝ cup Parmesan cheese freshly grated {optional}
Instructions
- Bring water, broth, pasta sauce, white beans, and red pepper flakes to a boil in a large soup pot.
- Reduce heat to a simmer, and stir in chicken pieces. Season with salt.
- Simmer for 5 minutes, and stir in spinach. Simmer another 5 minutes or until chicken is done and spinach has wilted.
- Stir in basil, and serve in 4 bowls with 2 tablespoons Parmesan cheese on top, if desired. Enjoy!
