These almonds are spicy, tangy, and a little bit sweet all in one
I love all kinds of nuts. Walnuts, pecans, almonds, cashews, pistachios, peanuts {I know they're not technically a nut but whatev}, I love 'em all.
I eat them everyday {often more than one type}, and I eat them throughout the day. I'm even guilty of just eating spoonfuls of peanut butter on days I don't feel like making lunch. Don't judge - I love peanut butter with all my heart...
Basically, nuts are a staple in my daily diet. I usually grab a handful of nuts on my way out the door if I know I'll be gone for a while.
But sometimes, plain nuts get boring, and I need something to make them a little more exciting.
There are many different types of flavored nuts that you can find in the grocery store, but I prefer making my own as opposed to a store-bought version. It's much cheaper and a fun way to get creative.
These Chipotle Honey Lime Almonds are spicy, tangy, and a little bit sweet all in one.
I put these in little baggies to throw in my purse or keep in my car just in case I need a snack.
They're also a perfect snack to go with an ice cold beer...
Chipotle Honey Lime Almonds
Ingredients
- 1 egg white
- ยฝ teaspoon lime zest about 1 lime
- 1 tablespoon lime juice about ยฝ lime
- 2 teaspoon white vinegar or cider vinegar
- ยฝ teaspoon avocado oil
- 1 tablespoon honey
- 1 teaspoon salt
- 1 teaspoon chipotle chili powder or use regular for less spicy almonds
- ยผ teaspoon chili powder
- ยผ teaspoon paprika
- โ teaspoon garlic powder
- 2 cups raw unsalted almonds
Instructions
- Whisk together all ingredients but almonds.
- Add almonds and stir well to coat completely.
- Preheat oven to 325°F and let almonds soak in mixture, stirring occasionally.
- Spray a baking sheet with oil or line with parchment. Using a fork or slotted spoon, transfer almonds to prepared baking sheet and put in a single layer.
- Bake in preheated oven for 8 minutes. Stir almonds, making sure they stay in one layer {no almonds overlapping}. Reduce the heat to 300°F. Put back in the oven and bake for about 12-15 minutes until lightly toasted & fragrant. Make sure to keep an eye on them close to the end because nuts burn fast!
- Let cool completely on baking sheet. Store in airtight container.
