Dangerously easy-to-make gluten-free Almond Butter Cracker Sandwich Cookies coated in chocolate

No seriously, gluten free and cracker can happily co-exist in the same sentence, and it can be a really good thing.
I received samples of Breton Gluten Free Crackers to create a gluten free recipe for a Recipe ReDux contest, and I decided I needed to try a cracker to inspire my brainstorming abilities.
Then I ate a few more but realized that I needed to stop because I needed those crackers to create a recipe with.
This happened a few more times... a cracker here, a cracker there. Every time I kept thinking wow these are so good
And then I went to create a recipe with the crackers and had only 4 left. Eek!
{No worries, I got some more}
So I am here to assure you that anyone, no matter if they are eating a gluten free diet or not, will love these crackers. They are buttery and delicious all by themselves. However, like any good cracker, they are great vehicles for cheese, dips, etc.
They are also great as dessert.
I don't usually think of something like a cracker as dessert but when topped with almond butter {or peanut butter} and coated in chocolate, they make a delicious, addicting, and satisfyingly sweet/salty dessert.

I made a chocolate coating using cocoa powder, coconut oil, maple syrup, vanilla extract, and salt. Coconut oil is perfect because it is relatively solid at room temperature {and hard when cold} so it helps the coating set up nicely. The amount in the ingredients make enough to coat all the sandwich cookies with a little bit leftover just in case. This means that the nutrition facts are likely a little higher than they really are, but better safe than sorry.
A little note of caution: the crackers aren't super sturdy so they can break if you press too hard when smearing on the almond butter or when smashing them together. However, I broke a few of them while making the sandwiches and just pressed them back together and coated them in chocolate. Once the chocolate coating hardens, they will be good to go!

Chocolate Covered Almond Butter Cracker Cookies
Ingredients
- 30 large crackers
- 5 tablespoon almond butter {or any nut/seed butter}
- For the chocolate coating:
- ยฝ cup cocoa powder
- 6 tablespoon coconut oil
- 2 ยฝ tablespoon maple syrup
- 1 teaspoon vanilla extract
- ยผ teaspoon salt
Instructions
- Spread 1 teaspoon each of almond butter onto 15 crackers. Top with a cracker.
Make the chocolate coating:
- Stir together the cocoa powder, coconut oil, and maple syrup in a medium microwave safe bowl, and heat for about 20 seconds. Stir together and add vanilla extract and salt. {Add a little more coconut oil if needed}
Make chocolate covered sandwich cookies:
- Dip one sandwich cookie in the bowl of chocolate coating. Wipe off excess and put on a waxed paper, parchment paper, or foil lined plate. Repeat with remaining crackers. Put in the refrigerator to harden for about 15 minutes. Enjoy!
