Nothing says "I'm against boring/diet salad" like putting a steak on a salad. Which is why I decided to make a tasty salad with steak.
In an effort to keep my fabulous readers happy over my week o' salads, I'm trying to make an array of different types of salads for Salad Week.
Today's salad is very allergy friendly since it has no nuts, shellfish, eggs, dairy, gluten, or soy.
And it's very friendly to those that don't eat salad because it's "too healthy."
This Cilantro Lime Steak Salad is so delicious, you'll forget how nutritious it is!

First, you make a cilantro lime dressing that doubles as a marinade for the steak.
Because I don't have a grill, I just cooked my steak on the stove, but you are always welcome to use your grill if you have that luxury.
Once the steak is cooked, you really don't have too much work other than opening a can of beans, rinsing & draining them, then slicing a roasted red bell pepper.
I buy the already roasted red bell peppers because they make life a lot easier, and I honestly don't enjoy roasting bell peppers because I hate trying to peel off the skin.
Toss together the lettuce (I used spring mix) with half of the remaining dressing, black beans, and chopped roasted red pepper.
Serve topped with the sliced steak, and add extra dressing if desired.
Quick note that it's not the thickest dressing because there is lots of yummy lime juice, so you really don't need that much to get lots of flavor.
So just start with adding a little at a time.
And there you have it - a simple & sensational steak salad.
Enjoy!
