    Coconut Almond Cookie Dough Dip from Living Well Kitchen

    So remember the other week when I made {No Sugar Added} Sugar Cookie Dough Dip... well, I polished that off in less than 24 hours.

    I couldn't help myself; it was so good. I needed to make more.

    I was in luck though because I was going to a little girls-night-in at a friend's house, so I decided it would be perfect to bring for a little snack.

    Always making new things to post on the blog, I decided to make a new flavor of cookie dough dip. A quick look in my pantry revealed that I desperately needed to go to the grocery store I had just the right ingredients to make a coconut almond flavored version.

    Let's just say that this was completely polished off before the night was over (and the night was over quite early since it was just a Wednesday night with a few girls sitting around drinking water and chatting).

    It's not too coconut-y and it has the perfect amount of almond flavor.

    I really love almond extract because it gives this nice burst of sweet flavor without having to add tons of sugar.

    A little bottle of pure almond extract will last you a while because you only need a tiny amount in most recipes to give it flavor.

    Be careful though because it's not like vanilla extract - more is not better. You don't want to have an overwhelming almond flavor. Just stick to the measurement of almond extract a recipe calls for and you'll be good.

    This coconut almond cookie dough dip is delicious and tastes way more indulgent than it is.

    Dates and chickpeas are used to help keep this cookie dough dip from being out of control unhealthy like most recipes are {think lots of butter, sugar, and flour}.

    Yes, dates have sugar but it's naturally occurring and they also contain fiber and vitamins & minerals.

    This is delicious served with apple or pear slices. Or just eat it with a spoon.

    If you're not into coconut or almonds or both, you can always make this Sugar Cookie Version which will absolutely rock your socks off!

    {No Sugar Added} Coconut Almond Cookie Dough Dip

    Ingredients

    • 1 cup pitted dates about 10 whole dates
    • 1 cup very hot water
    • 15 ounce chickpeas washed & drained (about 1 ยฝ cups)
    • 3 tablespoon almond butter
    • 1 tablespoon vanilla extract
    • ยผ teaspoon almond extract
    • ยผ teaspoon salt
    • โ…› teaspoon baking powder
    • ยผ cup oats regular or quick
    • ยผ cup unsweetened coconut flakes divided

    Instructions

    • Add the dates to a bowl and cover with very hot water. Let sit for 15 minutes.
    • Remove dates from the water. Add the dates and two tablespoons of date-soaking water to the bowl of a food processor. Blend until very smooth {once you add the other ingredients, it will not get any smoother}.
    • Add the chickpeas, almond butter, vanilla extract, almond extract, salt, and baking powder. Blend until completely smooth.
    • Add in oats and 3 tablespoon coconut. Blend until smooth {adding an additional teaspoon or two of water if needed to help blend}.
    • Transfer to a bowl and serve immediately or refrigerate for up to 5 days. Sprinkle with remaining one tablespoon of coconut before serving.
    • Serve with fruit slices {or just eat with a spoon}.

      I definitely need to make this for my kids (and myself too)! Love dips and doughs with garbanzo beans, and this sounds delicious with the coconut, and just a hint of almond extract. Pinning now!
