Sweet and spicy honey creole mustard marinated chicken quickly cooked and served in lettuce with a creamy honey mustard sauce on top

As always, I did some serious brainstorming.
Muffins, jam, and many other ideas popped in my head, but it's summer and it's hot and spending hours in the kitchen creating a new recipes sounded less than fun right now.
This week I've been over the bay {Point Clear, AL} with my family and we spend a lot of time eating.
But no one wants to spend a lot of time in the kitchen preparing meals, so no cook or very little cook are ideal recipes for the summer {even if you're just cooking for yourself}
I decided to make some lettuce wraps with dipping sauce with honey for my recipe idea.
I know it's not necessarily an out of the box idea using honey, but these are pretty dang delicious and definitely worth sharing.
Honey mustard is one of everyone's favorite flavor combinations.
I used Creole mustard to change it up a little from the typical regular yellow mustard and I'm so happy I did.
The sweetness of the honey helps balance out the flavors of the spicy Creole mustard. And the honey helps make the chicken perfectly juicy and full of flavor.
I like adding honey to marinades for chicken and even steak because it helps bring out a little sweetness in savory recipes.

Creole Honey Mustard Lettuce Wraps
Ingredients
For the wraps:
- 2 tablespoon honey
- 2 tablespoon Creole mustard
- ยฝ teaspoon salt
- 1 lb chicken tenders or breasts, cut into slices
- 1 red bell pepper diced
- 1 cucumber julienned
- 2 green onions diced
- 1 head Bibb or Iceberg lettuce
For the dipping sauce:
- ยผ cup honey
- ยผ cup Creole mustard
- ยผ cup cottage cheese
Instructions
- Put the honey, mustard, and salt in a zip-top bag and add the chicken. Marinate for at least 20 minutes or up to overnight {if marinating longer than 30 minutes, be sure to keep in the refrigerator}.
- Meanwhile, add all the ingredients for the dipping sauce into a food processor or blender and process until completely smooth.
- Once the chicken has marinated, heat a large nonstick skillet over medium-high heat and add the chicken. Cook for about 5 minutes per side until done.
- Stir together the bell peppers, cucumber, green onions, and cooked chicken. Fill each lettuce cup with chicken & veggie mixture. Drizzle dipping sauce over mixture and serve with any extra dipping sauce on the side.

What exactly is creole mustard? It looks like wholegrain? Delicious recipe though ๐ I think I will go ahead and use wholegrain mustard and make this for dinner later this week. The dipping sauce looks utterly divine!

It's mustard made with a spicier brown mustard seed - a Creole mustard seed. It has more flavor than regular mustard, but if you can't find it, then regular wholegrain mustard will definitely work! Hope you enjoy ๐
