    You'll love these Crock Pot Ranch Chicken Tacos.

    This recipe is based on some crock-pot tacos I found on Pinterest that are made with a packet of ranch dressing mix + a packet of taco seasoning mix.

    The problem is that I rarely keep spice mixes because I forget to buy them. Which is why I try to keep my spice cabinet stocked with tons of herbs and spices.

    It's more cost-effective and you don't have to remember to buy the spice packets at the store. Plus, you can make so many more dishes without buying a packet of seasoning mix.

    That being said, if you don't want to buy all those spices right now... simply use the spice packets!

    Use chicken thighs to make this more budget-friendly because they are inexpensive and flavorful.

    Feel free to use chicken breasts or a combination of chicken breasts and thighs. However, it will be a little more expensive if you use chicken breast.

    To enjoy these slow cooker chicken ranch tacos, serve with chips, corn tortillas, flour tortillas, or lettuce.

    If you drain the mixture, it's also tasty over a large bed of chopped romaine lettuce.

    The beauty of this slow cooker meal is that it has protein from the chicken plus extra nutrients and fiber thanks to the peppers and onions.

    Ingredients

    • 2 large onions diced
    • 1 medium green bell pepper diced
    • 2 cloves garlic minced
    • 1.5 pounds skinless chicken thighs
    • 1 teaspoon oregano
    • 1 teaspoon chili powder
    • ¾ teaspoon salt
    • ½ teaspoon cumin
    • ½ teaspoon garlic powder
    • ½ teaspoon paprika
    • ½ teaspoon coriander
    • ¼ teaspoon dill
    • ¼ teaspoon black pepper
    • ¼ teaspoon cayenne pepper
    • 1 cup unsalted chicken broth or water

    Instructions

    • Add all of the ingredients into a slow cooker in the order listed. Cover and cook on Low for 5-6 hours, until chicken is done.
    • Take out chicken and shred. Put shredded chicken back into slow cooker and cook on High for 30 minutes.
    • Serve as tacos, with chips, or over lettuce.

    Notes

    *You can use chicken breasts in place of the chicken thighs. It will cost a little more.
    *If you don't have all these spices, you can substitute all of the spices with a packet of taco seasoning + ranch seasoning. Note that the sodium content will increase significantly. 
    *Other veggies like carrots or celery can be used in place of the onion and/or bell pepper. Or double the onions and skip bell peppers, or vice versa.
