A gluten free meal made in the slow cooker with chicken, red bell peppers, onions, and sweet potatoes that's sure to please.

    Who doesn't love a good crock-pot meal?

Throw everything into a pot; it cooks all day, and dinner is ready when you get home.

I use my crock-pot all the time, year round {it's great in the summer when you don't want to turn your oven on and heat up the already-hot kitchen}.

My crock-pot recipes are the most viewed posts on my blog, so I decided to make one for sweet potato week.

Crock-Pot Chicken, Sweetpotatoes, and Peppers from Living Well Kitchen

Yesterday I talked about this delicious nutrition superstar ~ sweet potatoes have tons of Vitamin A, are a good source of Vitamin C, and have 4g of fiber per serving.

They're also extremely versatile, which is why I decided to dedicate an entire week to celebrating sweet potatoes and showing my readers a few different ideas for using sweet potatoes in your meals, be it breakfast, lunch, dinner, or somewhere in between.

This Crock-Pot Chicken, Sweet potatoes, and Peppers is a great fall meal - quick, easy, and comforting. It takes less than 15 minutes to prepare and cooks for about 6-7 hours.

Crock-Pot Chicken, Sweetpotatoes, and Peppers from Living Well Kitchen

It's the perfect one pot meal with satisfying protein {chicken}, filling whole grain carbohydrates {sweet potatoes}, and veggies {onions & bell peppers}.

I love how the onions and bell peppers almost melt and make this flavorful sauce; the sweet potatoes soften and some even melt into the sauce as well. And it's nicely seasoned with some cayenne pepper and red pepper flakes to add a little heat while the sweet potatoes sweeten the meal and balance out the flavors.

I don't understand how so many people I know don't have a crock-pot. It's one of my favorite and most used kitchen tools. And this recipe is one of my stand-bys because it's so simple yet so delicious and comforting ๐Ÿ™‚
