I use my crock-pot all the time, year round {it's great in the summer when you don't want to turn your oven on and heat up the already-hot kitchen}.
My crock-pot recipes are the most viewed posts on my blog, so I decided to make one for sweet potato week.

This Crock-Pot Chicken, Sweet potatoes, and Peppers is a great fall meal - quick, easy, and comforting. It takes less than 15 minutes to prepare and cooks for about 6-7 hours.
It's the perfect one pot meal with satisfying protein {chicken}, filling whole grain carbohydrates {sweet potatoes}, and veggies {onions & bell peppers}.
I love how the onions and bell peppers almost melt and make this flavorful sauce; the sweet potatoes soften and some even melt into the sauce as well. And it's nicely seasoned with some cayenne pepper and red pepper flakes to add a little heat while the sweet potatoes sweeten the meal and balance out the flavors.

Crock-Pot Chicken, Sweetpotatoes, and Peppers
Ingredients
- 2 onions chopped
- 2 cloves garlic minced
- 2 red bell peppers chopped
- 3 California sweetpotatoes washed and cut into cubes
- 1 lb chicken breast
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- ยฝ teaspoon onion powder
- ยฝ teaspoon salt
- ยผ teaspoon pepper
- ยผ teaspoon cayenne pepper
- ยผ teaspoon red pepper flakes
Instructions
- Place chopped onions and garlic and half of the peppers and sweetpotatoes on the bottom of the crock pot.
- In a small bowl, stir together garlic powder, onion powder, oregano, salt, pepper, cayenne pepper, and red pepper flakes. Rub the mixture onto the chicken breasts and place chicken on top of the veggies in the crock-pot. Add remaining peppers and sweet potatoes on top of chicken.
- Cover and cook on low for 6-7 hours. {Be sure to check to make sure the chicken is done before serving}.
