    Who doesn't love a good crock-pot meal?

    Throw everything into a pot; it cooks all day, and dinner is ready when you get home.

    I use my crock pot all the time, year-round {it's great in the summer when you don't want to turn your oven on and heat up the already-hot kitchen}.

    This Crock-Pot Chicken, Sweet Potatoes, and Peppers is a great fall meal - quick, easy, and comforting.

    It takes less than 15 minutes to prepare and cooks for about 6-7 hours.

    It's the perfect one-pot meal with satisfying protein {chicken}, filling whole grain carbohydrates {sweet potatoes}, and veggies {onions & bell peppers}.

    I love how the onions and bell peppers almost melt and make this flavorful sauce; the sweet potatoes soften and some even melt into the sauce as well.

    And it's nicely seasoned with some cayenne pepper and red pepper flakes to add a little heat while the sweet potatoes sweeten the meal and balance out the flavors.

    Ingredients

    • 2 onions chopped
    • 2 cloves garlic minced
    • 2 red bell peppers chopped
    • 3 California sweetpotatoes washed and cut into cubes
    • 1 lb chicken breast
    • 1 teaspoon garlic powder
    • 1 teaspoon dried oregano
    • ½ teaspoon onion powder
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • ¼ teaspoon cayenne pepper
    • ¼ teaspoon red pepper flakes

    Instructions

    • Place chopped onions and garlic and half of the peppers and sweetpotatoes on the bottom of the crock pot.
    • In a small bowl, stir together garlic powder, onion powder, oregano, salt, pepper, cayenne pepper, and red pepper flakes. Rub the mixture onto the chicken breasts and place chicken on top of the veggies in the crock-pot. Add remaining peppers and sweet potatoes on top of chicken.
    • Cover and cook on low for 6-7 hours. {Be sure to check to make sure the chicken is done before serving}.

      Yay! It's crock pot season! I live on mine all fall/winter long. Will be doing this recipe for sure. Like you I love how the peppers melt into yumminess!

        I don't understand how so many people I know don't have a crock-pot. It's one of my favorite and most used kitchen tools. And this recipe is one of my stand-bys because it's so simple yet so delicious and comforting 🙂
