    Refreshing and delicious, these Cucumber Hummus Cups are the perfect summer snack or appetizer!

    I went to the farmers market this morning and oh my gosh no one knows how to park a car it was a bajillion degrees!

    I had to park 5 minutes away because of the people who don't know how to park in between the yellow lines, and by the time I got to the farmers market, I was sweating.

    At 9 in the morning.

    However, I am not complaining because I love hot weather! I'll take a 100°F+ scorcher over a cold one any day.

    I just love it. I think it's the reason why I'll probably never be able to live above the Mason Dixon line.

    But hot weather comes with its problems, and one is staying cool.

    These Cucumber Hummus Cups are perfect for that!

    They are simple, no cook snacks or appetizers perfect for those hot summer days!

    Cucumber Hummus Cups from Living Well Kitchen

    These hummus cups are almost not even a recipe.

    You need hummus and cucumbers. {I used Roasted Garlic Hummus - yum!}

    Cut the cucumbers into ยผ inch slices and take a small spoon and scoop out the seeds {but make sure to leave a little layer so the hummus doesn't go through the bottom}. Then, you just fill all the cups with hummus. Simple as that.

    Ingredients

    • 4 large cucumbers or 6 medium
    • 1 cup hummus any flavor

    Instructions

    • Slice the ends off the cucumbers. Cut the cucumbers into ยผ inch slices.
    • Use a small spoon to scoop out most the seeds in each slice but make sure to leave a thin layer so the hummus doesn't go through the bottom.
    • Turn the cucumbers, scoop side down, onto a paper towel and let sit for 15 minutes {this helps get rid of extra moisture}.
    • Spoon about 1 teaspoon of hummus into each little cucumber cup. Enjoy!

    Notes

    *You should have about 48 slices each filled with 1 teaspoon hummus
