It takes just four ingredients and less than 5 minutes to make this delicious and filling soup
I had all intentions of talking to you about the lack of people that use their blinkers in New Orleans a totally different recipe, but then I got sidetracked due to my insane hunger.
I am one of those people that needs a gigantic meal at breakfast or I am basically hungry all day long.
Well, I ended up having a teeny tiny breakfast and thought I was going to die by lunchtime.
So I threw open my refrigerator and found the first thing I could think of to eat.
Lack of food makes me dramatic.
Luckily, I have a few items that are standbys in my house... things I always have in my kitchen... things I count on for days when I have less than 5 minutes to cook a meal.
Unluckily, I didn't have all my standby ingredients. No eggs. No oats. No yogurt. No spinach.
I am currently in the midst of trying to clean out my overstocked pantry, so I am trying not to buy very much from the grocery store.
Or maybe that's my excuse because I don't feel like going to the store for one of my standard 'stock-the-kitchen' grocery store trips. I've been saying "I need to go to Costco" for the past 3 Sundays. It just keeps not happening.
But that's neither here nor there because I did have these four important ingredients: salsa, black beans, cooked chicken, and chicken broth

And that's all that you need to make this incredibly fast and delicious soup. Seriously, you just need chicken, black beans, salsa, and chicken broth.
Throw everything into a microwave safe bowl or a saucepan, and heat. In less than 5 minutes, you have a perfectly tasty, filling meal.
It saved my life. {see aforementioned drama queen tendencies regarding hunger}
I usually add some extra ingredients like sliced avocado, lime juice, and/or cilantro. But none of those are necessary.
In fact, the chicken isn't even necessary. If you don't have it or don't want to use it, then just skip it.
For vegetarian version: just use vegetable broth and skip the chicken. Add an extra ยฝ cup black beans.
And there you go. It took you longer to read this post than it will take you to make this soup, and isn't that a glorious thought? A meal ready in less time than a one-sided conversation...
Oh and it's healthy: full of veggies, lean protein, and fiber!

Four Ingredient Soup
Ingredients
for the soup:
- 1 ยฝ cups chicken broth or vegetable broth (12 oz)
- ยฝ cup black beans
- ยฝ cup salsa
- ยพ cup cooked chicken 3 oz.
optional toppings:
- sliced avocado
- chopped cilantro
- lime juice
- shredded cheese
Instructions
- Stir together all the soup ingredients in a microwave-safe bowl or medium saucepan.
- In microwave: heat on high for 2 minutes, stirring halfway through cooking.
- In saucepan: heat over medium-high for 3-5 minutes, stirring occasionally until warmed through.
- Top with optional toppings if desired. Enjoy!

Wow this is great! I would have never thought just 4 ingredients could make such a delicious looking dish. I love adding avocado to my soups as well. Will have to try this out!
