Ingredients
- 3 large tomatoes cored & diced {be sure to save the juices from tomatoes while chopping}
- 2 medium red bell peppers or yellow, diced
- 1 T jalapeno minced
- 1 english cucumbers seeded and diced
- ยฝ cup Vidalia onion diced, about half of an onion
- 2 clove garlic minced
- ยพ teaspoon salt
- 4 cups low-sodium tomato juice
- ยผ cup red vinegar or white wine vinegar
- ยผ cup chopped cilantro or parsley
- 1 T lime juice or lemon juice
- ยฝ teaspoon hot sauce
- 2 teaspoon olive oil
- 1 avocado sliced
Instructions
- In a plastic or glass bowl, stir together tomatoes, bell peppers, jalapeño, cucumber, onion, and garlic. Sprinkle salt on top and let sit about 10-15 minutes.
- Add tomato juice, vinegar, parsley, lime juice, and hot sauce. Gently stir.
- Refrigerate at least 30 minutes or until ready to serve.
- Top each serving with ยฝ teaspoon olive oil. Serve with avocado slices on top.
