Tomato Gazpacho is a light, refreshing soup perfect for summer. A great way to use up your fresh summer tomatoes
I've never been a huge tomato fan unlike everyone else in my family.
Tomatoes are aplenty in our house every summer. I mean like buckets of tomatoes. These people {yes, I'm calling my family "these people"} aren't kidding around when it comes to their tomatoes.
When we get together during the summer, usually at my grandparents' bay house, everyone brings tomatoes. It's a little insane (in my non-tomato loving opinion).
Since I am surrounded by tomatoes I've just recently started enjoying a juicy, ripe, deep red, delicious summer tomato.
I've had a revelation: A really good tomato is, in fact, really good, and now I know why everyone raves about summer tomatoes...
In an effort to use some of the abundant tomatoes populating our household, I made this gazpacho.
It's refreshing and light and great for lunch or as a first course at dinner.
Even if you still aren't apart of the tomato loving camp, you'll enjoy this summer-time soup.
Fresh Tomato Gazpacho
Ingredients
- 3 large tomatoes cored & diced {be sure to save the juices from tomatoes while chopping}
- 2 medium red bell peppers or yellow, diced
- 1 T jalapeno minced
- 1 english cucumbers seeded and diced
- 1/2 cup Vidalia onion diced, about half of an onion
- 2 clove garlic minced
- 3/4 teaspoon salt
- 4 cups low-sodium tomato juice
- 1/4 cup red vinegar or white wine vinegar
- 1/4 cup chopped cilantro or parsley
- 1 T lime juice or lemon juice
- 1/2 teaspoon hot sauce
- 2 teaspoon olive oil
- 1 avocado sliced
Instructions
- In a plastic or glass bowl, stir together tomatoes, bell peppers, jalapeño, cucumber, onion, and garlic. Sprinkle salt on top and let sit about 10-15 minutes.
- Add tomato juice, vinegar, parsley, lime juice, and hot sauce. Gently stir.
- Refrigerate at least 30 minutes or until ready to serve.
- Top each serving with 1/2 teaspoon olive oil. Serve with avocado slices on top.
