These little banana bites filled with peanut butter and covered in chocolate are a great snack or dessert for the warmer weather
I have given myself Spring Break this week, and I'm busy working on a cookbook with my grandmother {get excited!!}. That means that I won't be giving too much attention to the blog this week.
But even though I'm busy, I'll still have some good recipes this week. The posts just won't be the usual super fantistically exciting ones.
These little frozen banana bites are really cute and tasty. They're fun to eat, too.
I based my recipe off one from Yummy Mummy Kitchen. I made a smaller batch because I only had two bananas and needed the other one to make the Peanut Butter Banana Cookies from last week.
I also didn't add any extra sugar or sugar substitute in the peanut butter yogurt mixture because I didn't think it needed it since the bananas were sweet already.
A tiny pinch of salt and a splash of vanilla extract help bring out the sweetness as well.
These are a great afternoon snack or dessert, especially now that the weather is getting warmer. I popped a few in my mouth after getting home from a long walk and they were perfect!
They keep well in the freezer for about a month, so you can double the recipe and keep a big batch when a craving for something sweet strikes.

Frozen Peanut Butter Banana Bites
Ingredients
- 2 bananas sliced {cut each banana into 16 slices}
- 3 tablespoon peanut butter {or any nut butter}
- 2 tablespoon plain Greek yogurt
- ยผ teaspoon vanilla extract
- pinch salt
- โ cup semi-sweet chocolate chips
- 1 teaspoon coconut oil
Instructions
- Put 16 mini-muffin liners in a mini-muffin tin. Arrange 16 banana slices in the muffin tin. Set aside.
- Stir together peanut butter, Greek yogurt, vanilla extract, and salt in a bowl. Put about 1 teaspoon of mixture on each of the banana slices in the muffin tins. Top with another slice of banana.
- Put chocolate chips and coconut oil in a microwave safe bowl. Microwave for 25 seconds. Stir and repeat in 25 second intervals until smooth.
- Drizzle about 1 to 2 teaspoon chocolate onto each banana bite, letting it drip off the sides. Put in the freezer for about 30 minutes before serving. Keep covered in a tightly covered container in the freezer for up to 1 month.

When I saw frozen banana bites in my twitter feed, I just had to click to see who was having the same treat :))) yours are much prettier however, and I love that you lined them in muffin cups. I also just used PB with no mix-ins. Next time I'm trying it your way :))
