    This easy weeknight meal cooks in one skillet and is super flavorful thanks to the goat cheese.

    Goat Cheese Chicken from Living Well Kitchen

    I love the hot weather! I really do.

    I do not, however, like to turn my oven on in the summer. I doubt many people do.

    And I usually forget to start dinner until it's about to get dark which ends up being around 8 o'clock in the evening.

    Basically, I need something quick & easy that doesn't require the use of an oven. Goat Cheese Chicken is the answer. It's definitely a summer-friendly meal!

    Goat Cheese Chicken from Living Well Kitchen

    First, it's super nutritious with lots of veggies & lean protein.

    You can serve it with some brown rice, quinoa, tortillas, or even these amazing smashed potatoes {definitely how I'd do it!}.

    It is also delicious as leftovers and great for lunch.

    I love goat cheese, but if you're not a goat cheese fan {wha?!}, you can use feta, mozzarella, or even cheddar.

    I get the most amazing goat cheese from the farmers market, and it is such a treat when I have it in my refrigerator.

    Goat Cheese Chicken

    Ingredients

    • 1 tablespoon oil divided
    • 4 chicken breasts 4-6 oz. each
    • 1/4 teaspoon black pepper
    • 3/4 teaspoon salt divided
    • 2 medium red bell peppers sliced
    • 1 medium green bell pepper sliced
    • 2 medium onions sliced
    • 1 clove garlic minced
    • 1 lemon
    • 1 teaspoon fresh thyme
    • 4 oz goat cheese crumbled

    Instructions

    • Heat a very large skillet over medium-high heat and add 1 teaspoon oil. Once oil is hot, add chicken. Sprinkle chicken with black pepper and 1/2 teaspoon salt. Cook for about 5-7 minutes per side, depending on thickness of chicken, until done. Remove from skillet and set aside.
    • Add remaining 2 teaspoon oil to skillet and add bell peppers and onions. Sauté for 10 minutes, stirring occasionally.
    • Stir in garlic and remaining 1/4 teaspoon salt. Cook for 1 minute.
    • Add cooked chicken into skillet. Sprinkle with thyme and squeeze lemon over everything. Cook for about 3 minutes, until everything is heated through. Serve with cheese crumbled on top. Enjoy!
