This easy weeknight meal cooks in one skillet and is super flavorful thanks to the goat cheese.

It is also delicious as leftovers and great for lunch.
I love goat cheese, but if you're not a goat cheese fan, you can use feta, mozzarella, or even cheddar.
I get the most amazing goat cheese from the farmers market, and it is such a treat when I have it in my refrigerator.
Goat Cheese Chicken
Ingredients
- 1 tablespoon oil divided
- 4 chicken breasts 4-6 oz. each
- ยผ teaspoon black pepper
- ยพ teaspoon salt divided
- 2 medium red bell peppers sliced
- 1 medium green bell pepper sliced
- 2 medium onions sliced
- 1 clove garlic minced
- 1 lemon
- 1 teaspoon fresh thyme
- 4 oz goat cheese crumbled
Instructions
- Heat a very large skillet over medium-high heat and add 1 teaspoon oil. Once oil is hot, add chicken. Sprinkle chicken with black pepper and ยฝ teaspoon salt. Cook for about 5-7 minutes per side, depending on thickness of chicken, until done. Remove from skillet and set aside.
- Add remaining 2 teaspoon oil to skillet and add bell peppers and onions. Sauté for 10 minutes, stirring occasionally.
- Stir in garlic and remaining ยผ teaspoon salt. Cook for 1 minute.
- Add cooked chicken into skillet. Sprinkle with thyme and squeeze lemon over everything. Cook for about 3 minutes, until everything is heated through. Serve with cheese crumbled on top. Enjoy!
