Guacamole + ground beef makes a fun, nutritious alternative to your typical burger that's full of vitamins, minerals, and flavor

Avocados are a staple in my kitchen. They make everything better. You can literally use them whenever. Plus, they are super healthy and nutrient dense {lots of nutrients in just a small amount}.
Their peak season is between March and September, so you've got another month or so to pack the nutrition all-star into your meals, snacks, etc.

There are also lots of things that are improved when topped with avocado like Vegetarian Breakfast Enchiladas, Black Bean & Kale Tacos, Mexican Quinoa Salad, Beef Carnitas Tacos, and Mexican Stir-Fry
But today, for my entry into the Cooking with California Avocados, I decided to make some Guacamole Burgers.
I basically just made some guacamole then mixed it with some lean ground beef, then grilled or broiled them until done.
Then I served 'em on a bun and topped with some salsa and even more avocado. So so so amazing.

These burgers are creamy and beyond flavorful. I used 94/6 lean ground beef and you'd never know it wasn't the higher fat ground beef.
The avocado helps keep them moist with its beneficial fat.
Plus you definitely won't need mayo on this burger.
You can add some salsa or maybe even a few more avocado slices, but that's really all you need condiment wise for these burgers.
If you are looking for a fun, healthy alternative to your typical burger, then these are for you.
I mean, they'll make anyone happy who likes a good, juicy burger no matter if they are interested in its health factor or not.
But for those that do care about health, these burgers are high in monounsaturated fat {thanks to the avocado}, high in protein, low in carbohydrates, and have 17% Iron, 11% Magnesium, 26% Phosphorus, 20% Potassium, 41% Zinc, 10% Copper, 28% Selenium, 21% Vitamin K, 16% Riboflavin, 37% Niacin, 31% Vitamin B6, 25% Folate, 42% Vitamin B12, 16% Pantothenic Acid

Guacamole Burgers
Ingredients
- 1 avocado mashed
- 2 tablespoon chopped fresh cilantro
- 1 jalapeño de-seeded & minced
- 1 clove garlic minced
- 1 tablespoon lime juice
- 2 green onions chopped
- ยฝ teaspoon salt
- ยผ teaspoon ground black pepper
- 1 lb ground beef lean
optional for serving:
- 4 whole grain buns or lettuce leaves
- 1 cup salsa
- 1 avocado sliced
Instructions
- Stir together the avocado, cilantro, jalapeño, garlic, lime juice, green onions, salt, and pepper.
- Gently stir guacamole mixture into ground beef, being careful not to over mix.
- Shape into 4 patties. Grill or Broil until done. Enjoy on a whole grain bun or in a lettuce wrap. Top with salsa and/or additional avocado slices.
