Great for Halloween, you can use cookie cutters to cut out shapes to make cute sandwiches. Use regular paprika if you don't want smoky pimento cheese.
How cute are these?! I can't believe I'm just posting this, but I didn't think about this until yesterday afternoon. However, that doesn't mean you can't make them tonight to celebrate or make them any other day or holiday for that matter.
They don't have to be for Halloween. I mean, how cute would they be as footballs? or turkeys... or Christmas trees!
Christmas trees definitely! And the white cheddar jalapeño pimento cheese would be perfect with its red & green specks of color in the white cheese. Oh, I can't wait to make those!

I made the pimento cheese with smoked paprika to give it a nice smoky flavor; ya know, since Halloween is an eerie holiday and smoky comes to mind or maybe this is just my brain getting a little too imaginative...
Anywho, there is one thing that you absolutely must promise not to do and that is use pre-shredded cheese. I beg you to shred your own cheese. It takes less than 10 minutes, and it makes a world of difference in flavor.
Please, save me the agony of thinking you might use shredded cheese and just don't. Buy a block of cheese and shred it yourself. OK?

You certainly don't have to make these as sandwiches. You could use it for a dip too. Or make grilled cheeses {sooo good!}
And feel free to leave out the smoked paprika or use equal amounts of regular paprika if you're not a fan of smoky or you cannot find smoked paprika.
But remember, say no to pre-shredded cheese...

Smoky Pimento Cheese Sandwiches
Ingredients
- 8 ounce block cheddar cheese I like Cabot, {do not get shredded, please!}
- ยฝ cup cottage cheese
- 1.5 tablespoon grated onion {plus the juices that come with it}
- 4 ounce jar diced pimentos drained
- โ teaspoon cayenne pepper
- ยผ teaspoon smoked paprika {optional but gives it the smoky flavor}
- 14 slices whole grain bread toasted & cut into shapes with cookie cutters {if making sandwiches}
Instructions
- Grate the cheese into a medium bowl. Set aside.
- Put the cottage cheese in a blender or mini food processor. Blend until smooth. Add to the bowl of cheese.
- Stir in the grated onion & juices and pimentos. Stir well to combine. Season with cayenne pepper and smoked paprika {if using}.
- Let sit in the refrigerator for at least 2 hours for flavors to combine.
- To make sandwiches, spread about ยผ cup on one slice of bread and top with other slice of bread. Cut in half or use a cookie cutter to make shapes. Repeat with remaining pimento cheese and bread.
Notes
*Alternately, serve the pimento cheese as a dip/spread or grilled cheese.
