This tasty version of macaroni and cheese is perfect for celebrating, brightening your day, or just about any reason works!

Is it bad that I've basically been celebrating myself for the past week? I don't really love birthdays but I do love random holidays...
So celebrate my blogiversary I did.
In the form of the most delicious macaroni & cheese.
I know that sounds like a strange "celebratory meal"
but do you see that?
There's lobster in that mac & cheese
and when you add lobster to anything it makes it a celebration, right?
Right
But you need no celebration to make this a.ma.zing meal.
I mean you could even make it to cheer you up, if that's what you need
All I know is that this meal is great for anything - for celebrating, for brightening your day, any reason works for me.
And everyone will be happy you made it, and that's what matters most
Lobster Macaroni and Cheese
Ingredients
- 1/2 tsp oil
- 10 oz elbow macaroni {about 2 1/2 cups}
- 3 TBSP butter divided
- 1 large onion diced
- 1 clove garlic minced
- 2 TBSP flour
- 2 cups milk
- 1/2 tsp salt
- 1/8 tsp cayenne pepper
- 1/8 tsp nutmeg
- 1 bay leaf optional but adds great flavor
- 4 oz grated Gruyere cheese about 1 1/3 cups
- 6 oz cheddar cheese about 1 1/2 cups
- 3/4 lb cooked lobster chopped {I used two whole cooked lobsters and used the tail & claw meat}
- 2/3 cup whole grain bread crumbs
Instructions
- Preheat oven to 375°F. Rub a medium sized baking dish {about 11 x 7} with oil. Set aside.
- Cook the pasta according to package directions, omitting salt & fat, about 6-8 minutes. Drain, set aside.
- In a Dutch oven or large pot, heat 2 TBSP butter over medium heat.
- Once melted, add in the onions and sauté until softened, about 7 minutes.
- Turn heat down to low. Whisk in flour, and stir constantly for 1-2 minutes. Then slowly, whisk in milk. Season with the salt, cayenne pepper, nutmeg, and add in the bay leaf.
- Cook another 2-3 minutes, continuing to stir, until the sauce has thickened and is smooth.
- Remove from heat, and stir in cheeses. Remove bay leaf. Stir in chopped cooked lobster and cooked macaroni, and stir until everything is well combined.
- Transfer the macaroni mixture to the prepared baking dish.
- Melt the remaining tablespoon of butter and mix with bread crumbs.
- Top macaroni with buttered bread crumbs.
- Bake in preheated oven for about 30 to 35 minutes, until bubbly and lightly browned. Let sit for 5 minutes before serving. Enjoy!

Did you get a dog?????? Also, is there anything I could substitute for lobster? Like shrimp or something? Or would it not taste as good? I'm seriously thinking about making this tonight...

Yeah, I definitely think you could substitute shrimp or probably even chicken! Lobster, of course, is amazing but just the mac & cheese without it is delish
