S'mores collides with brownies to make these delicious treats that are irresistibly gooey and chocolatey!
Fact: Brownies are good
Other fact: S'mores are downright yummy
But Brownies + S'mores = pure gooey, chocolatey heaven
I know I know...
This is evil to even show you these pictures because you can only imagine how good a s'mores brownie is, right?
It seems obvious after just looking at them, but these are not health food.
They are improved though
Most s'mores brownies are a little too intense for me. Graham cracker crust made with white flour {graham crackers are not whole wheat, bah!}, lots of butter, and sugar. Then top that with a layer of brownie batter. Bake and cover with marshmallows.
You can see how the amount of ingredients that make me feel not so great add up quite fast.
To change it up a little, I made a graham cracker layer instead of making a graham cracker crust. I just made homemade graham crackers and then topped that with brownie batter. I also used my black bean brownies as the brownie mix. And there's really no way to improve the marshmallow layer without taking away the authentic charm of a s'mores brownie. So cover that in marshmallows I did 🙂
These are best eaten within 24 hours after you make them, but I actually preferred them cold.
Here's my forewarning - these are a mess. Just like s'mores.
Let them cool a little bit before cutting. I thought it was easier to cut them a little larger than I usually cut brownies {I typically do 32 per pan. This time I did 24 per pan}.
I use a large knife that I run under hot water and quickly pat dry. I think the heat helps cut through the marshmallow; I dunno.
What I do know is that these things are incredibly amazing and no one, not one single person, will be mad you made these. In fact, will you make some for me because I'm feeling incredibly sad that I don't have one sitting in front of me now? 😉
S'mores Brownies
Ingredients
For graham cracker layer:
- 1 cup whole grain flour
- 1/8 tsp cinnamon
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 4 TBSP melted butter
- 1/4 cup honey
For brownie and chocolate layer:
- 15 ounce can reduced-sodium black beans well-rinsed and drained
- 2 cups fresh spinach
- 3 eggs
- 3 TBSP avocado oil
- 3/4 cup granulated sugar
- 1/2 cup cocoa powder
- 1 tsp vanilla extract
- 1/2 tsp instant coffee powder
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1-1/4 cups semi-sweet chocolate chips
For marshmallow layer:
- 2-1/2 cups mini marshmallows
Instructions
- Preheat the oven to 350°F. Line a 9 x 13 inch baking dish with foil. Set aside.
- For the graham cracker layer:
- Whisk together flour, cinnamon, baking soda, and baking powder. Set aside.
- Stir together melted butter and honey, and stir into the flour mixture. Mix well.
- Pat the dough into the lined baking dish in a thin layer, making sure to completely cover the bottom of the baking dish. {It might look thin but it will be good once it bakes.}
- Bake in preheated oven for 6 minutes. Remove from the oven and set aside.
For the brownies:
- Meanwhile, put the black beans, spinach, and eggs in the bowl of a food processor and process until completely smooth. {You want there to be absolutely no chunks of beans or spinach!}
- Add the oil, sugar, cocoa powder, vanilla extract, instant coffee powder, baking powder, and salt. Process until completely combined.
- Pour batter over partially baked graham cracker layer.
- Bake in the preheated oven for 22 minutes.
- Take out of the oven and sprinkle with chocolate chips. Put back in the oven for 5 minutes. Remove from oven and use a spatula to spread the chocolate chips in a thin layer over the brownies.
- Sprinkle the entire pan with marshmallows. Turn oven to broil and broil for 1 minute {watch them carefully!} until marshmallows are lightly browned.
- Let cool for about 20-30 minutes before slicing. Enjoy!

Oh my gosh- these are so good. I ate them with a fork straight out of the pan before finally finding the self control to cut them up so I could serve them to guests. They were a big hit! I can't wait to try to brownies on their own, too!
