How to make your own homemade (almost) whole wheat bread. Super easy bread recipe with a nice crust that is great for gifting. Try it plain or fill it with cheeses, herbs, and/or other goodies.

I've been meaning to try this bread for about {according to Pinterest} 28 weeks. Why oh why did I wait so long?! I pretty much followed the exact directions from the Simply So Good Blog.
Honestly, I was a little skeptical of this bread, so I didn't want to waste good cheese or something else in the bread in case it didn't work.
But now I will absolutely be making this again and will fill it with other yummy goodies {Rosemary, Lemon, and Gruyere?! Yes, please!}
Anywho, this is a great food gift... Everyone needs loves bread. It's really inexpensive. It makes your house smell ah.may.zing.
And if you wrap it in a tea towel, it is a cute little homemade gift that everyone will enjoy.
Unfortunately, I got a little worried that it was too dry as I was making my bread and added too much water. That's what made it a little flat, and the inside was a wee bit damp.
It's still good though. I mean, how can homemade bread fresh from the oven not be good?!
I know bread can be intimidating and seem like a mighty daunting task, but seriously, this is not hard. If you follow the directions, you really can do it. {I got a little detailed in the directions, but I kinda got confused making this and I really don't want you to miss out on the deliciousness.}
Here is my "overly detailed, not that complicated but it looks like it is because the directions are so long" recipe.
(Almost) Whole Wheat Bread
Ingredients
- 2.5 cups whole wheat pastry flour not regular whole wheat
- ยฝ cup bread flour unbleached
- 1.5 teaspoon salt
- ยฝ teaspoon yeast rapid rise or instant
- 1.5 cups water
Instructions
- Whisk together the flours, salt, and yeast in a large bowl.
- Pour in the water and stir until all combined. It should be pretty sticky. Not wet-sticky, but sticky. It'll look "shaggy" if you will.
- Cover the bowl with plastic wrap, and set aside for at least 12 to 24 hours. {Don't refrigerate}
- When ready to bake, preheat the oven to 450°F.
- Once the oven is preheated, put your large Dutch oven in it. Let that stay in there for 30 minutes. {This scared me, but it is a-ok. Just do it}
- While the oven is preheating, cover your work surface with flour. Cover it really well because this stuff is sticky. Transfer your dough to the work surface and shape the dough into a ball. Cover that with the plastic wrap and let rest while everything preheats.
- Carefully, take the Dutch oven out of the oven, and put your dough ball into it. Cover it with the lid, and carefully transfer it back to the oven.
- Bake for 30 minutes; then take the lid off and put it back in the oven.
- Bake for 13 to 15 more minutes. Your bread should be golden and crispy looking. If you tap it, it should sound hollow.
- Take it out of the Dutch oven and transfer to a cooling rack to cool completely. Enjoy!
