    About Egg Salad with Hummus

    This egg hummus salad is quite similar to Avocado Egg Salad but uses hummus instead of mashed avocado as the binder.

    Simply stir chopped hard-boiled eggs and hummus together to make a creamy and protein-packed lunch or snack.

    Enjoy it with chips, sliced veggies, over lettuce, or as a Hummus and Egg Sandwich.

    You can use either store-bought hummus or homemade hummus, like one of these recipes for homemade hummus without tahini.

    Hummus: The beauty of this hummus egg salad recipe is that you can change its flavor easily by using a different hummus.

    Make your own hummus or buy it from the store; it will be delicious either way.

    I recommend using a flavored hummus like spicy hummus or roasted garlic hummus.

    Eggs: All egg sizes work. Simply adjust the amount of hummus you add. That's why I recommend adding half the hummus and increasing it as needed.

    How to Fix a Mistake

    Lacks flavor: Add a pinch of salt, black pepper, or red pepper. Another option is to add a splash of lemon or lime juice.

    Too thick: If you're having trouble mixing it together, it likely needs more hummus. Simply add extra hummus by the spoonfuls until it easily combines.

    Too thin: If the egg salad hummus is too thin, add another chopped hard-boiled egg.

    Make-Ahead Ideas

    Egg salad hummus can be made in advance, but it is best if enjoyed within the first day or two after it has been prepared.

    You can hard boil the eggs up to one day before.

    Additionally, if you are making homemade hummus, you can make that 24 hours in advance.

    Because it takes only a few minutes to prepare, I recommend making it right before eating.

    Storage Suggestions

    Keep in an airtight container in the fridge for up to 5 days. I don't recommend freezing egg salad.

    Egg salad lasts for about 5 days in the refrigerator. Be sure to keep it cold at all times.

    It should not be left out of the fridge (or on ice) for longer than 2 hours.

    Why is egg salad runny the next day?

    The binder of egg salad has liquid in it which can cause the egg salad to be runny. Simply stir the egg salad together.

    If there is too much liquid, you can lightly blot it with a towel to remove excess moisture.

    Do you chop or mash eggs for egg salad?

    Both work! You can chop or mash eggs for egg salad.

    My preferred method is to roughly chop the eggs and then mash them when I am mixing everything all together.
