You will make them these cookies!!
I had a perfectly good post written, and then something happened: I made these cookies last night.
And now my world is forever changed! I'm not sure I will ever be able to make a chocolate chip cookie without an Oreo inside of it. Oh bother...
If you know what's good for you (no, not health wise), you will make them, too. If you love someone, anyone, you will make them these cookies. And then they will love you back at least ten fold. Scouts honor.
Be sure you have designated recipients for these cookies, or you might find yourself eating them for breakfast fresh from the oven with ice cream on top. That may or may not have happened this morning...
Anywho, I will forever be indebted to Picky Palate for coming up with this genius idea, and after making these, you will too!
I did use a different chocolate chip cookie dough recipe, and I bought one of those $1 containers of mini Oreo's, so I wouldn't have to make more than 2-3 dozen cookies {these are dangerous cookies, friends}.
Mini Oreo Stuffed Chocolate Chip Cookies
Ingredients
- ½ cup unsalted butter softened, 1 stick
- ¼ cup granulated sugar
- ¾ cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1½ cups unbleached all-purpose flour
- ½ teaspoon salt
- ½ teaspoon baking soda
- ¾ teaspoon baking powder
- 1 cup semi-sweet chocolate chips
- 3.5 ounce Mini Oreos Mini Oreo Go Packs! found in the check-out aisle
Instructions
- Preheat the oven to 350°Line a baking sheet with parchment paper or spray with non-stick cooking spray.
- In a mixer, combine butter and sugars on medium-low speed for about 2 minutes. Add in egg and vanilla extract.
- In a medium bowl, whisk together flour, salt, baking soda, and baking powder.
- With the mixer on low, slowly add in dry ingredients. Make sure to scrape sides at least once will mixing to ensure everything is incorporated. Fold in chocolate chips. Refrigerate cookie dough for 30 minutes.
- Using a teaspoon, scoop cookie dough and place Oreo on top. Scoop another teaspoon and add dough on top of Oreo. Seal edges together. Repeat until all dough has been used. Refrigerate cookies on prepared baking sheet for 15 minutes.
- Bake in preheated oven for 10-12 minutes, until lightly browned but not over-baked. Rest on cookie sheet for 2 minutes, then transfer to cooling rack.
- Enjoy with a cold glass of low-fat milk or ice cream!
