    If you are getting tired of reheating your leftovers or making turkey sandwiches, then I have the perfect recipe for you: Leftover Thanksgiving Frittata

    After a few days of eating leftovers, I get a little bored. Since I hate wasting food, it makes a lot more sense to reinvent my leftovers instead of throwing them away.

    Tossing out a sweet potato casserole makes me feel sad, but how many days of sweet potato casserole can you really enjoy?

    I decided there had to be a better way to enjoy my leftovers that didn't involve more sweets or butter or whatever my body had a little too much of over the holiday week. 

    This frittata uses leftover sweet potato casserole in place of milk to help it thicken up with extra vitamins and flavor. I like the contrast of the sweet potatoes with the roasted vegetables. I love sweet and savory things.

    This frittata couldn't be much easier and is a breeze to make. You only need 5 ingredients to make it, and it is an excellent way to use up leftovers (even if they aren't from Thanksgiving or another holiday meal). 

    Whisk together the eggs and sweet potato casserole to start. I make my sweet potato casserole not too sweet and I make sure to try to avoid adding the sweet potato casserole topping (like marshmallows or crumble topping). You could also use some leftover cooked sweet potatoes and mash them to make half of a cup.

    Then fold in the roasted Thanksgiving vegetables. You could also add in some cooked chicken, turkey, steak, tofu, beans, etc. 

    Add some oil to a hot, oven-safe, non-stick skillet and pour in your mixture. Cook for a little on the stove, sprinkle with cheese, and transfer to a preheated oven. Bake until done, and slice. 

    This frittata couldn't be much easier and is a breeze to make. You only need 5 ingredients to make it, and it is an excellent way to use up leftovers (even if they aren't from Thanksgiving or another holiday meal). 

    I serve mine with leftover low sugar cranberry sauce if I have some. Or use hot sauce or low sodium salsa. Sometimes I'll just sprinkle with salt & pepper and dig in!

    Ingredients

    • 5 large eggs
    • ยฝ cup sweet potato casserole
    • 3 cups roasted vegetables
    • ยผ cup shredded cheese 1 ounce
    • 1 teaspoon olive oil
    • ยฝ cup cranberry sauce optional

    Instructions

    • Preheat oven to 400*F.
    • Whisk together the eggs and leftover sweet potato casserole. Stir in the vegetables.
    • Heat a medium oven-safe non-stick skillet over medium heat. Add oil and pour in egg mixture. Cook for 8 minutes.
    • Sprinkle with cheese, and transfer to oven.
    • Bake for 12-15 minutes until cooked through and cheese is bubbly. Serve with cranberry sauce if desired. Enjoy!

    Notes

    *Make sure not to use the marshmallow or crumble topping part of the sweet potato casserole. You can substitute with regular mashed sweet potatoes or other mashed squash.
