    Lemon Feta Dip

    Incredibly easy and really tasty Lemon Feta Dip that has only 5 ingredients and takes less than 5 minutes to prepare. Serve with watermelon for an extra refreshing app.

    Get excited because this recipe is incredibly simple. It has 5 ingredients and it takes less than 5 minutes to make. Oh and it's quite tasty.

    Over Memorial Day weekend, my cousin made this for us as an appetizer and we were all fighting over the bowl. I may or may not have considered just using my finger for dipping... I mean I was with family...

    Anywho, this stuff is gooooooood

    Basically, you just put feta cheese, lemon zest, lemon juice, minced garlic, and olive oil into a food processor. Give it a good whirl, maybe scraping down the sides a few times, and you're ready to go.

    Fun fact: be sure you zest your lemon before you cut it to squeeze the juice out of it. It'll make it so much easier.

    My cousin found the recipe on Pinterest and did make the comment that she would probably use less olive oil than the original recipe called for next time because she didn't feel like it needed as much. And I agree, so I made some adjustments to my version.

    Honestly, there isn't much else to write about this recipe. It's so simple, it's silly.

    If you make it and want to eat it immediately, it will be a little runnier - making it more like a sauce. After it is refrigerated it hardens up a little, making it a more durable consistency - like a spread.

    There really isn't a wrong or right way with this stuff. It's good when it's saucier and when it's thicker. Basically, it's just plain good, in a really good way.

    Ingredients

    • 7 ounces feta crumbled {about 1 cup}
    • 1 teaspoon lemon zest
    • 2 tablespoon lemon juice
    • 2 tablespoon extra virgin olive oil
    • 1 small clove garlic minced
    • red pepper flakes optional
    • sliced veggies or crackers for serving

    Instructions

    • Add the feta, lemon zest, lemon juice, olive oil, and garlic to the bowl of a mini food processor. Blend until completely smooth; you may have to scrape down the sides a few times.
    • Transfer to a bowl and sprinkle with red pepper flakes if desired. Can serve immediately or refrigerate {which will cause the dip to be a little firmer}. Serve with sliced veggies or crackers.

        Thanks Lisa! They combine so well together; it's hard not to make this dip every time I have feta in my fridge. But I don't think that's a bad thing 😉
