This lemon vinaigrette could not be much easier.
You can use any herbs you like. I really like thyme and lemon together. I think they complement each other well.
Rosemary is also really good with the lemon.
Or go wild and do both!

Ingredients
- 1 lemon juiced
- 1 tablespoon white vinegar or red wine vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon extra virgin olive oil
- 1 teaspoon chopped fresh herbs like thyme or rosemary
- pinch salt
- freshly ground black pepper
Instructions
- Whisk together the lemon juice, vinegar, and mustard.
- Slowly drizzle in the olive oil while constantly whisking.
- Stir in herbs and salt & pepper to taste
