    This lemon vinaigrette could not be much easier.

    You can use any herbs you like. I really like thyme and lemon together. I think they complement each other well.

    Rosemary is also really good with the lemon.

    Or go wild and do both!

    Ingredients

    • 1 lemon juiced
    • 1 tablespoon white vinegar or red wine vinegar
    • 1 teaspoon Dijon mustard
    • 1 tablespoon extra virgin olive oil
    • 1 teaspoon chopped fresh herbs like thyme or rosemary
    • pinch salt
    • freshly ground black pepper

    Instructions

    • Whisk together the lemon juice, vinegar, and mustard.
    • Slowly drizzle in the olive oil while constantly whisking.
    • Stir in herbs and salt & pepper to taste
