Made with guacamole and chipotle cheddar, this Mexican Grilled Cheese is a tasty way to enjoy this cheesy favorite
Chipotle cheddar, tomatoes and guacamole between two buttered slices of bread and served with salsa... such a tasty grilled cheese that are great for when you want something with a little more flavor than your basic grilled cheese.
I decided that some tomato slices with a side of salsa would be nice nutritious option to add to my grilled cheese to up the nutritional value of the cheesy sammy.
If you don't want to use Chipotle Cheddar {it's a smoky, slightly spicy cheese}, you can use pepper jack or just regular sharp cheddar.
Other than that, this grilled cheese is packed with flavor and is an easy, filling, vegetarian meal.

Mexican Grilled Cheese
Ingredients
- 2 slices whole grain bread like Ezekiel Sprouted Bread
- 1 teaspoon butter softened
- 1.5 oz chipotle cheddar shredded, like Cabot Chipotle Cheddar
- ยผ cup guacamole
- 3 thin tomato slices
- ยผ cup salsa
Instructions
- Preheat a skillet or griddle over medium high heat.
- Spread the bread evenly with about ยฝ teaspoon each of butter. Put the bread butter-side-down, and sprinkle with half of the cheese. Evenly spread the guacamole over the cheese. Top with tomato slices and remaining cheese. Top with the other slice of bread, butter-side-up.
- Transfer bread {with the buttered sides on the outside} to the skillet and cook about 3-5 minutes per side, until cheese is melted and bread is toasted. Enjoy!
