    Easy Miso-Glazed Salmon from Living Well Kitchen

    I have a thing for cookbooks, especially ones that have simple, high quality recipes from an author I trust. My friend Sonali, The Foodie Physician {Sonali is a physician as well as a blogger/recipe developer extraordinaire}, has a new cookbook out that is fabulous -- The Natural Pregnancy Cookbook!

    Not only does it have great recipes, it is chock full of helpful information on having a healthy pregnancy.

    There is so much information regarding pregnancy out there that it can be overwhelming, but the Natural Pregnancy Cookbook breaks down the information into digestible facts.

    Easy Miso-Glazed Salmon from Living Well Kitchen

    The first 60 pages include a wealth of information regarding a healthy pregnancy. There are tips on what to eat, how much, planning meals, managing morning sickness and cravings, food safety and more! It's informative yet not overwhelming.

    You can certainly read it in a day or two and use it as a reference throughout your pregnancy.

    This book is a great guidebook that you'll want to keep on the kitchen counter even after your bundle of joy arrives.

    Easy Miso-Glazed Salmon from Living Well Kitchen

    Seeing as I am not pregnant, I am more interested in the recipe section of the book and it certainly does not disappoint!

    There are over 125 recipes in here and they cover everything you'd ever want to eat. Most recipes are heavy on the veggies which I love, and even better: they're simple.

    I was drooling as I flipped through the cookbook, but the Quick and Easy Miso-Glazed Salmon immediately caught my eye.

    Quick and Easy? Seafood? Four ingredients? Sign me up!

    Easy Miso-Glazed Salmon from Living Well Kitchen

    I've never cooked with miso, but it gave the salmon an interesting flavor that I really enjoyed.

    I served it with some brown rice and cooked spinach because I was going for quick and easy. No fancy side dishes; the salmon steals the show.

    But next time, I will pair with Miso Roasted Brussels Sprouts from the cookbook ๐Ÿ™‚

    I made two little change in my version: adding a little extra soy sauce and baking the fish instead of broiling. My glaze was burning, so I just turned down the oven. Pretty sure that's a user error because my oven is ancient and extremely unreliable.

    Other than that, this salmon is quick, easy, incredibly flavorful, and highly nutritious to boot! Props to Sonali for the fabulous cookbook!

    Ingredients

    • 4 5-6 ounce wild salmon fillets
    • 2 tablespoon white miso paste
    • 2 tablespoon soy sauce
    • 4 teaspoon honey

    Instructions

    • Preheat the oven to 400*F. Line a baking sheet with foil or grease a baking dish. Place the salmon fillets on the baking sheet or in the baking dish.
    • Mix the miso paste, soy sauce, and honey together. Brush the glaze over the salmon fillets.
    • Bake the salmon for about 10-15 minutes until done, basting the salmon with the glaze halfway through baking time. Enjoy immediately!

    *Use tamari sauce in place of soy sauce for a gluten free version.

      Thanks so much for the wonderful review, Meme! I'm so happy that you liked the book and feel that it would be a good resource for expectant moms. The salmon looks great and I'm glad that you liked the miso- I use it in a lot of dishes to add flavor. You do have to keep an eye on the glaze when it's under the broiler and if it starts to get too charred, I would recommend moving it to a lower shelf in the oven.

      i absolutely enjoyed Sonali's book too..so resourceful..i have been meaning to try cheesy cauliflower stick, soon i will have to. this salmon recipe looks delicious.
