    My birthday is a week from today

    It will be the 5th anniversary of my 21st birthday, so I'm celebrating all week like it's the first time I can set foot into a bar and buy beer.

    So naturally, I'm drinking all week over here.

    I mean, no, I'm not really drinking all week. I've been working on developing fun summery alcoholic drinks all summer {mainly the times that I am around a lot of people to get them to test the recipes}.

    For the first day I decided to pick the one that was my favorite in that I could drink it every time I chose to drink alcohol. But the other drinks I'm posting this week are super delicious, so definitely don't forget to check back.

    I based mine off this recipe from Bobby Flay. I used less sugar and replaced the rum with vodka. Oh and I used less than what the original recipe called. The original recipe calls for 1 liter of rum, which is about 4 cups. Doing a little math here... but that means that if the recipe makes 8 drinks then each drink has ยฝ cup {or 4 ounces} of rum in it.

    Uh holy cow, that's a lotta rum! I cut that in half and used vodka for personal preference, but feel free to use light rum if that's more your thing.

    Also, I made less of the mint-lime simple syrup. You end up with about 1 โ…“ cups mint-lime simple syrup. The Mojito Limeades need only โ…” cup of the syrup, so you can save the syrup for a later use {keep in tightly covered in the refrigerator for up to 10 days} or double the other ingredients to make enough Mojito Limeades for 16 drinks.

    These make pretty big drinks so you could always have them serve 10. Oh and be careful because they go down really easily ๐Ÿ™‚

    Ingredients

    For Mint-Lime Syrup:

    • 1 cup sugar
    • 1 cup water
    • ยฝ cup mint
    • 2 limes zested

    For Mojito Limeades:

    • ยฝ cup mint plus a few for garnish
    • 2 limes sliced
    • 4 cups crushed ice divided, plus more for serving
    • โ…” cup Mint-Lime Syrup recipe above
    • 2 cups vodka
    • ยฝ cup fresh lime juice {about 3-4 limes}
    • 2 cup club soda 16 oz.

    Instructions

    Make the Mint-Lime Syrup:

    • In a small saucepan, bring the sugar and water to a boil. Stir together until the sugar dissolves and remove from heat. Add the lime zest and mint, and let sit until cool {about 30 minutes to an hour}. Strain, and set aside.

    Make the Mojito Limeades:

    • In a large pitcher, muddle the mint, lime slices, and 2 cups of ice. Stir in โ…” cup Mint-Lime Syrup, vodka, and lime juice. Add another 2 cups of ice.
    • Fill 8 glasses with ice. Fill equally with Mojito Limeade mixture then top each with about ยผ cup club soda. Garnish with lime and mint, if desired.

    Notes

    *The mint-lime syrup makes about 1 โ…“ cups syrup. You only use โ…” cup for the Mojito Limeades, so you can either save the syrup, tightly covered, in the refrigerator for up to 10 days or double the other ingredients and make enough for 16 drinks.
    *You can use vodka or light rum in this recipe
