    Serve right after preparing, or you can make it ahead of time.

    I prefer it at room temperature or a little warm.

    It's amazing when served with my microwave potato chips. Or just use regular potato chips or some veggies to serve.

    Ingredients

    • 6 slices center-cut bacon
    • 1 large Vidalia onion diced
    • 16 oz mushrooms sliced
    • 4 cloves garlic minced
    • ¾ teaspoon salt
    • ¼ teaspoon red pepper flakes
    • 1 ½ teaspoon fresh thyme
    • 8 ounce cream cheese full-fat or reduced-fat
    • 2 cups plain Greek yogurt 16 oz
    • 3 tablespoon chopped chives or 1 green onion, chopped

    Instructions

    • Put bacon in a large skillet and heat over medium. Cook until bacon is crispy & done. Transfer to paper towels to drain. Wipe skillet of all but 1-2 teaspoons of bacon grease.
    • Add onions to the bacon grease and sauté for about 5 minutes until softened. Add mushrooms and sauté until they release their juices, about 7 minutes. Add garlic, salt, red pepper flakes, and thyme and stir for 30 seconds. Add half of the bacon. Remove from heat, and set aside to cool.
    • Meanwhile, stir together cream cheese, yogurt, and chives. Stir in mushroom mixture. Sprinkle with remaining bacon. Really good with these microwave potato chips
