When I was little, my parents always made me eat greens, pork, and black eyed peas on New Year's Day.
I did not enjoy this meal.
None of those foods have ever been on my favorite foods lists.
Now, that I've gotten a little older, I can appreciate them a little more, but I'm still not about to fix myself a big plate of the traditional New Year's day meal.
But I need to get my good luck, prosperity, good health, etc.
What to do... what to do?
Fortunately, my grandmother, Nan, has a perfect solution to my debacle.
I love soup!
And it's made in a crock-pot, so there's not much work to be done for this soup.
It's a win win win situation: it tastes sooooooo good! I get in my servings of food that I need to have a good new year. and on the off chance that you have a long night ringing in the new year, you won't have to do much work to make this soup
I went ahead and prepped everything today, so all I have to do tomorrow morning is plug in the slow-cooker and turn it on.
