Now on to today's post:
If you want to make your house smell warm & inviting, just make a batch of this delicious peanut butter banana bread.
While I've never been a huge fan of banana bread, I can totally get behind this one since it's peanut butter banana bread. I love me some peanut butter {huge understatement}!
I based it on this recipe from Cooking Light but changed it slightly. I cut back on the butter & increased the peanut butter & yogurt, used some sugar substitute, made it with white whole wheat flour, and left off the glaze.
Fresh from the oven and smeared with a little butter or peanut butter - this bread is a perfect blend of peanut butter & banana flavor without one being overpowered by the other.
I don't think it needed the glaze because, honestly, I was just too lazy to make it ha.
It would be really tasty with โ cup mini chocolate chips folded into the batter just before transferring to the loaf pan.
Even if you're not a huge banana bread fan, but you like peanut butter & banana together, you'll like this.
This bread sort of reminds me of my banana breakfast bars, which is a really good thing because those are goooood
So use those bananas turning brown and mushy on your counter as an excuse to make this bread. The more ripe the bananas are, the sweeter they are, so make sure your bananas are pretty ripe or you might need more sugar.

Peanut Butter Banana Bread
Ingredients
- 1-ยฝ cups mashed very ripe bananas {from 3 bananas}
- ยฝ cup plain Greek yogurt
- ยฝ cup peanut butter
- 1 tablespoon melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- ยฝ cup sugar
- โ cup brown sugar
- 1-ยฝ cups white whole wheat flour
- ยผ cup flax seed meal
- ยพ teaspoon baking soda
- ยฝ teaspoon salt
- 1 teaspoon cinnamon
- โ teaspoon allspice or nutmeg
Instructions
- Preheat oven to 350°F. Spray a 9x5 loaf pan with non-stick spray. Set aside.
- In the bowl of an electric mixer, beat together bananas, yogurt, peanut butter, butter, eggs, and vanilla extract for 1 minute. Add sugar and brown sugar. Beat until completely combined {about 1 minute}.
- In a medium bowl, whisk together flour, flaxseed meal, baking soda, salt, cinnamon, and allspice.
- With the mixer off, add half of the flour mixture to the banana mixture. Beat about 20 seconds on low and add remaining flour mixture. Beat until just combined, making sure flour is completely incorporated.
- Transfer batter to the prepared loaf pan, and bake in a preheated oven for 50-60 minutes until a cake tester or toothpick inserted into the center comes out clean. If the top starts to brown too much, cover loosely with foil.
- Let cool in pan for 10 minutes before transferring to a cooling rack to cool completely.
