    Remember when you were little and you had to miss a friend's birthday party, and it was like the worst thing to happen to you for the whole month?

    Well, that's how I felt last Monday when all my friends were celebrating Regan Jones' 40th birthday on January 5th.

    I was all excited for her birthday because Gretchen from kumquat organized a "birthday party" with a bunch of bloggers posting on Regan's birthday.

    We were to post a gluten free dessert or a fun beverage in honor of Regan, co-creator of so many things I love - Recipe ReDux, Healthy Aperture, Blog Brûlée  - on her big day.

    I knew that Monday would be hectic, so I made my dessert on Saturday, took pictures, and made a mental note of the recipe {easiest dessert recipe ever}. All I had to do was write a quick post and format the recipe. The hard part was done.

    Then... cue ominous, dark music... then I woke up feeling like I had been hit by a Mack truck. I literally couldn't move. It took an extreme amount of effort to sit up for longer than 10 minutes.

    At multiple points on Sunday and Monday, I attempted to open up my computer and try to just type "Happy birthday Regan. Here's your dessert. Enjoy!"

    I couldn't even do that. Looking at a computer screen made my brain feel like it was going to explode.

    I may or may not be dramatic.

    Needless to say, her birthday passed and I felt incredibly sad that I missed it.

    All my friends were posting their delicious desserts and drinks, and I was sitting here throwing myself a pity party instead of joining the birthday party.

    Now that I feel like a human being and can use a computer, I am posting my recipe to celebrate Regan's birthday. Hey, better late than never right?! And who doesn't like a belated birthday gift?

    This recipe is so incredibly simple. You need three ingredients and about 5 minutes. You can also change it to fit your taste. If you'd rather use chopped almonds or pecans or walnuts, feel free. Oh the possibilities!

    Peanut Chocolate Clusters from Living Well Kitchen

    Basically, you melt chocolate chips with a touch of coconut oil, stir in peanuts, and then plop spoonfuls of the mixture onto parchment or wax paper. Refrigerate for about 15 minutes {or freeze for 5-10}, and you're good to go!

    Ingredients

    • 1/2 cup semi sweet chocolate chips
    • 1/2 teaspoon coconut oil
    • 1/2 cup peanuts

    Instructions

    • Melt chocolate chips and coconut oil on 50% power in microwave for 90 seconds. Stir and heat an additional 30-45 seconds until chocolate is melted.
    • Stir in the peanuts.
    • Drop by spoonfuls onto parchment or wax paper. Refrigerate at least 15 minutes or freeze for 5-10 minutes until clusters have set. Enjoy!

    Notes

    *Feel free to use different chopped nuts - pecans, walnuts, almonds, etc.
    *You can heat the chocolate chips and coconut oil in a saucepan over very low heat, if desired.

      Awww, thanks for the belated wishes!!! I've had so few birthday parties (based on the Christmas and New Year's Eve #CelebrationSaturation) so I'm absolutely in the mood for making this a month long party 🙂

      So sorry you were sick 🙁 but glad to have you back in the land of the living and blogging 🙂
