    Piña Coladas are notoriously unhealthy, but they're just so dang delicious

    I searched for healthy piña colada recipes and got lots of recipes. Lots

    But so many seemed either too complicated or required some sort of mix or something. I do not do mixes!

    Or some of the recipes were too healthy and just didn't seem like they'd be creamy enough. Now, I'm all about improving, but I want them to taste good, too. Taste is a major requirement which is just as important as health in my opinion.

    Being healthy is great & all but not when you have to sacrifice taste!

    In the goal of keeping the ingredients list short, I only use one type of rum and chose Malibu Rum which is rum with coconut liquor in it.

    To make these, you'll need frozen pineapple, coconut rum, coconut milk, ice, and pineapple juice.

    I intended on buying frozen pineapple so I didn't have to bother cutting it and freezing it, but they were all out at Walmart. If you buy the already frozen pineapple then these are ready in a flash. Just add everything to a blender and serve. If you like them really creamy, add a little more coconut milk. If you like less coconut, use more pineapple juice and less coconut milk.

    Make sure you use coconut milk and not coconut water. While I love coconut water, it won't work in this recipe.

    I buy the regular, unsweetened coconut milk. The light coconut milk is just diluted with water, so if you want to lighten this even more then just use about ½ cup regular coconut milk + ¼ cup water in place of the ¾ cup coconut milk.

    Ingredients

    • 3 cups frozen pineapple (about ¾ whole pineapple)
    • 1 cup coconut milk
    • ¼ cup pineapple juice or use additional coconut milk
    • 6 ounces coconut rum or regular rum
    • 1 ½ cups ice

    Instructions

    • Add all ingredients to a blender, and blend until smooth. Add more ice, pineapple juice, and/or coconut milk if needed. Enjoy!

    Notes

    *Skip the pineapple juice and use an equal amount of coconut milk for a creamier drink and extra coconut flavor.
    *Makes 4 cups
