    If you are also feeling a little tired and not in the mood to cook a good dinner for your family {or just you}, then here's a good one for you:

    Pizza Chicken

    Packed with pizza flavor but a lot healthier than most pizza you'd get from a pizza place.

    Since I was trying to make this healthy and full of veggies without too many carbs, I served it with a side of sautéed kale, but a side of some brown rice, garlic bread, or whole grain pasta would go well with this dish.

    Also, this recipe can easily be cut in half and is great as leftovers, so you can make this to serve one {with leftovers} or for two.

    It can also be doubled to serve more.

    Ingredients

    • 4 4-6 ounce chicken breasts
    • ¼ teaspoon salt
    • ¼ teaspoon red pepper flakes
    • 2 cups pizza sauce
    • 2 oz. pepperonis chopped
    • 1 medium bell pepper diced
    • 8 oz. mushrooms diced
    • 1 small onion diced
    • 4 oz. mozzarella cheese sliced or shredded, or 3 oz. Parmesan cheese

    Instructions

    • Preheat oven to 350°F. Spray an 8 or 9 inch square baking dish with non-stick spray.
    • Sprinkle both sides of chicken with salt and red pepper. Put in baking dish.
    • In a small bowl, stir together pizza sauce, pepperonis, bell peppers, mushrooms, and onions. Top chicken breasts evenly with pizza sauce mixture. Sprinkle each with 1 oz. mozzarella cheese or ¾ oz. Parmesan and cover with foil.
    • Bake in preheated oven for 25-30 minutes, then remove cover and bake another 5 to 10 minutes, until chicken is done.
