    Pizza Stuffed Mushrooms

    These Vegetarian Pizza Stuffed Mushrooms are a tasty way to enjoy lots of veggies and are full of pizza flavor.

    Today I have an easy vegetarian recipe for a "Meatless Monday" meal.

    I initially was planning on putting turkey pepperoni in there, but that would have required a trip to the grocery store.

    And I was just not in the mood.

    But these stuffed mushrooms are so amazing, even a meat lover will enjoy these.

    Or you could add some {ยผ cup} chopped pepperoni or even cooked sausage in there if you wanted.

    Pizza Stuffed Mushrooms from Living Well Kitchen

    If you like pizza but are looking for something with more veggies your typical slice o' pizza, these pizza stuffed mushrooms are great.

    They have tasty pizza flavor but are packed with veggies.

    I like to serve with a side of garlic bread or something for a more satisfying meal.

    I love eating stuffed vegetables... Stuffed squash, stuffed zucchini, stuffed mushrooms, stuffed peppers, stuffed artichokes, stuffed avocado

    It makes me happy because you end up consuming more than one veggie, and that makes me feel good.

    Ingredients

    • 2 portobello mushroom caps
    • 4 ounces cream cheese softened
    • 2 ounces freshly grated Parmesan cheese divided (ยฝ cup)
    • 1 clove garlic minced
    • ยฝ teaspoon dried oregano
    • ยผ teaspoon dried basil
    • โ…› teaspoon red pepper flakes
    • โ…› teaspoon salt
    • ยฝ cup diced green bell pepper about ยฝ medium bell pepper
    • ยผ cup diced red onion about ยผ medium onion
    • 1 tablespoon sun dried tomatoes minced
    • pizza sauce for serving

    Instructions

    • Preheat oven to 375°F. Line a baking sheet with foil.
    • Wipe mushroom with a damp cloth or paper towel, and scoop out gills and stem. Put gill side down on the baking sheet, and bake for 10 minutes.
    • Meanwhile, stir together cream cheese, ยผ cup Parmesan cheese, garlic, oregano, basil, red pepper flakes, and salt. Stir in bell pepper, onion, and sun-dried tomato.
    • Take mushroom out of oven and wipe off. Flip over and fill mushroom with cheese mixture.
    • Bake for 10 minutes. Sprinkle with remaining ยผ cup cheese, and bake another 5 minutes. Serve with pizza sauce if desired. Enjoy!
