    Leftover pork and rice changes from boring to tasty in this simple, quick Pork Fried Rice recipe that is a great way to use up leftovers and veggies in the fridge

    I apologize for the most uninspiring post ever. Yesterday, I never went outside. No that's a lie, I went outside once... to the front porch to take pictures of some pancakes {recipe coming in a few weeks}.

    Either way, we have been trapped inside.

    Oh wait, I did something....I turned this yummy pork tenderloin into some delicious pork fried rice.

    It's great if you're trying to get rid of things in your kitchen. The vegetables I used can totally be changed, and you can use leftover cooked chicken or shrimp in place of the pork. Or just make vegetarian fried rice and add an extra egg.

    Ingredients

    • 2 tablespoon avocado oil divided
    • 1 medium red bell pepper diced
    • 1 medium onion diced
    • 3 green onions diced
    • 3 cloves garlic minced
    • 4 cups cooked brown rice
    • 2 large eggs
    • 5 tablespoon soy sauce or tamari sauce
    • 1 teaspoon Sriracha sauce
    • ยฝ teaspoon sesame oil
    • 1 teaspoon rice wine vinegar
    • 1 cup leftover cooked pork {about 4 oz. cooked}, chopped

    Instructions

    • Heat 1 tablespoon oil in a large skillet over medium-high.
    • Add bell pepper, onion, and 2 green onions. Stir-fry for about 5 minutes, until vegetables are softened and lightly browned.
    • Push vegetables to the sides of the pan. Add remaining tablespoon oil. Stir in garlic and rice. Stir fry about 5 minutes, making sure all of the rice gets in contact with the skillet.
    • Whisk together eggs with 1 tablespoon soy sauce.
    • Push the rice to the sides of the pan with the vegetables. Stir eggs into the pan. Cook 30 seconds then stir in with the rice and vegetables.
    • Meanwhile, whisk together remaining 4 tablespoon soy sauce, Sriracha sauce, sesame oil, and rice wine vinegar. Stir into the pan.
    • Add pork to pan, and stir everything together to combine. Cook about 3 minutes until pork is heated through.
    • Sprinkle remaining green onion over fried rice, and serve with extra soy sauce if desired.
