Incredibly easy and quick, this Pork Posole is packed with protein, veggies, and fiber. It's spicy, filling, and delicious!
This is one of my favorite soup recipes. It's spicy and oh-so delicious.
It's also incredibly easy and quick to make. I timed it, and it was ready in under 40 minutes start to finish.
It has a smoky spicy flavor from the chipotle peppers but if that's not your thing then by all means skip them and use a (4 ounce) can of diced green chiles in their place. I have done that before with much success.
Like I said, this is one of my favorite soup recipes because of its taste and ease, so I have a few tips:
~this is a great soup to use up any leftover pork or even chicken. Just skip the first step of cooking the pork and add in a cup or two of already cooked & chopped pork {or chicken} with the broth.
Just use whatever you have left over; there's no need to be super exact about the amount of cooked pork {or chicken}. It'll be good either way. You could also add a can of drained & rinsed chickpeas in place of the pork to make this soup vegetarian/vegan.
~back to that spicy smoky flavor I just talked about... make sure you just use one chipotle pepper from a 7-ounce can of chipotle peppers. That gives tons of heat and smokiness. If you aren't a huge fan of spicy, then I'd err on the side of not enough because this is pretty spicy and you can always add more. By all means, use a 4-ounce can of roasted green chilies if you'd prefer. That'll give it a milder flavor.
~you can use either white or golden hominy; both are good in this soup. Hominy is corn that has been soaked and the germ is removed. I love hominy's texture. It's puffy and chewy and so good. I also like it in chili and taco soup
~you can also change around the veggies. Don't like carrots? Add more bell peppers and onions. Hate green bell peppers? Use red. Rather use corn instead of hominy? Go right ahead. This is not a recipe that must be followed to a T; make it your own.
~I wouldn't substitute water for all of the broth in this soup. Because the soup doesn't cook for very long, you really need that extra flavor that a delicious broth gives the soup. I recommend homemade broth for the best taste and best ingredients with the least amount of salt. Lucky for you, here are two easy slow cooker recipes for homemade broth: Chicken Broth and Vegetable Broth both made in the crock pot. For this batch of Pork Posole, I used all water and while it was still good, it lacked that little extra something that takes a recipe from mediocre to delightfully delectable. You can always use 2 cups of broth plus 2 cups of water if you need to.

And there you have it... my tips and suggestions for this highly recommended soup. It's an excellent weeknight meal, especially when you're a little stopped up and you need something to help you breathe. That chipotle pepper will help clear your sinuses right up ๐
Pork Posole
Ingredients
- 1 tablespoon olive or canola oil
- 1 lb . pork tenderloin cut into bite sized pieces
- 2 bell peppers diced
- 2 onions diced
- 2 carrots diced
- 2 clove garlic minced
- 1 chipotle pepper minced {from a 7 oz. can chipotle peppers – just use one pepper}
- 4 cups low sodium chicken broth or beef broth
- 1 can white or yellow hominy 15 oz.
Instructions
- In a large saucepan or soup pot, heat oil over medium-high heat. Add sliced pork and stir-fry for about 3 minutes, until no longer pink. Remove from pan, and set aside.
- Stir peppers, carrots, and onions into the saucepan and sauté for about 5 minutes until vegetables have softened.
- Add in garlic and chipotle pepper, and stir for 30 seconds.
- Add reserved pork, broth, and hominy. Stir well.
- Bring soup to a boil, and reduce heat to a simmer. Simmer, uncovered for 15 minutes, until vegetables are tender and flavors have blended together.
