    Potato Chip Fish

    Fresh fish coated in spicy, flavorful potato chips. Perfect for a fun entertaining meal

    The other day one of my friends was talking about a meal she had recently eaten at a restaurant here {in New Orleans}. I can't remember where it was but I can remember what she ordered...

    Uh, I think I started drooling when she described it, and I immediately knew it would have to be something I tried as soon as possible.

    If you are unlucky, and don't have access to Zapp's Potato Chips, then I think any kettle cooked chips will do.

    If you are lucky and have access to Zapp's then pick your favorite flavor. You really can't go wrong with any of the flavors. They're all good. I used Spicy Cajun Crawtators and Voodoo. Both were amazing!

    This recipe is great because it requires only a few ingredients: milk, egg, hot sauce {optional}, fish, chips, and oil. No other seasonings are needed because the chips give so much yummy flavor.

    I loved this dish and served it with roasted vegetables to add some nutritional value. This meal is a real treat & enjoyed by everyone!

    Potato Chip Crusted Fish

    Ingredients

    • 1 cup milk 2%, whole, or unflavored non-dairy milk
    • 1 large egg
    • ยฝ teaspoon hot sauce optional
    • 4 fish fillets 4-6 oz each
    • 5 ounces potato chips any flavor
    • 1 teaspoon olive or coconut oil

    Instructions

    • Whisk together milk, egg, and hot sauce and add to a zip-top bag or shallow dish. Soak fish in mixture for about 30 minutes.
    • Crush potato chips into crumbs {easiest in a food processor}. Put in a shallow dish.
    • Heat oil over medium-high heat in a large skillet.
    • Take fish out of milk and let drip dry. Put fish in bowl with chips and press lightly to coat the entire fish in chips. Put coated fish in the hot oil. Repeat with remaining fillets.
    • Flip fish after about 5-7 minutes or when it easily releases from the skillet.

    Notes

    *I like using kettle cooked potato chips. My favorite is Zapp's Cajun Crawtators.

      What a great idea to use potato chips instead of breadcrumbs. Love this as it gives the fish a crunchy coat yet is gluten free!! Yum!
