How to Make Protein Pancakes without Protein Powder
Time needed: 20 minutes
Protein Pancakes without Protein Powder are delicious and can be made in advance to enjoy later.
- Pulse oats in a food processor or blender.
- Add egg, cottage cheese, vanilla extract, and baking powder.
Blend.
- Cook on a skillet or griddle.
- Enjoy!

Store in an airtight container in the fridge for up to 6 days or the freezer for up to 6 weeks.

Simply let cool then freeze in an airtight container. It's best to separate pancakes with parchment or wax paper so they don't stick together.
Or freeze on a baking sheet lined with parchment paper. Once the pancakes are frozen, transfer them to a zip-top freezer bag.
This recipe serves one but can be easily multiplied to make more.

Protein Pancakes
Ingredients
- ยผ cup oats regular or quick, not steel cut or instant
- 1 large egg
- ยผ cup cottage cheese
- โ teaspoon baking powder
- โ teaspoon vanilla extract
Instructions
- Add all of the ingredients to a food processor or blender. Blend until completely combined and smooth. Let sit for at least 5 minutes.
- Heat a large non-stick skillet or griddle over medium heat.
- Add pancake batter to pan {it makes about two regular sized pancakes}. Cook for about 3-4 minutes or until tiny bubbles form on the top of the pancake.
- Flip and cook another 2-4 minutes until done.
- Serve with a little real maple syrup and/or butter. Enjoy!

If you truly want these to be gluten-free, you need to make sure you're using certified gluten-free oats. While oats don't naturally contain gluten, they are often grown and/or harvested in close proximity with wheat and end up contaminated. As someone with Celiac Disease, I must be very careful and can say that I will know if I've eaten most oats - Quaker will give me symptoms of gluten; but something like Bob's Red Mill Certified Gluten-Free Oats will be fine.
I just tend to cringe at any recipe that claims to be gluten-free but calls for oats; while someone on a fad diet trying to be gluten-free might not notice a thing here; those of us with Celiac will likely get sick from many different oats on the market today. ๐

I have a note about that in the post and on my disclosure page. Tons of foods have gluten as well as other common allergens in them from the processing and/or packaging of the item. That's why it's so important for people to read labels, ingredients lists, and any allergen warnings.

These look incredible and so healthy. I can't wait to make them this weekend! I wanted to ask if you've ever tried them with a chia egg (1 tbsp chia seeds + 3 tbsp water) for an egg free version? Since they hold more water than flax seeds they might work. Cheers!

I was very impressed with these! I, like your sister, was hesitant to try them... I'm a huge pancake person and never would have thought to use cottage cheese in the batter. Since I like pancakes so much, and they're not always the healthiest choice, I'm always on the lookout for recipes that are healthier so I can eat them once or twice (or four) times a week ๐ I loved the smooth texture and the fluffiness! I also got a "french-toast-y" taste (however, that may be because I added a sprinkle of cinnamon to the batter). Either way, these were delicious, and I think I may have found a new go-to recipe!
