    About Protein Pancakes

    One of my all-time favorite and most popular recipes ever.

    I make these almost weekly because they're so delicious and easy.

    Plus, you can make multiple batches of pancakes and freeze them for later, so they're great for breakfast meal prep.

    They keep you full for hours and are an excellent start to your day.

    Another bonus is that they only have 5 easy-to-find ingredients, and you don't need protein powder to make this fluffy protein pancakes recipe.

    How to Make Protein Pancakes without Protein Powder

    Time needed: 20 minutes

    Protein Pancakes without Protein Powder are delicious and can be made in advance to enjoy later.

    1. Pulse oats in a food processor or blender.

    2. Add egg, cottage cheese, vanilla extract, and baking powder.

      Blend.

    3. Cook on a skillet or griddle.

    4. Enjoy!

    Storage Suggestions

    Store in an airtight container in the fridge for up to 6 days or the freezer for up to 6 weeks.

    Frozen Protein Pancakes

    Yes! You can freeze protein pancakes, so they are great to make ahead of time for breakfast meal prep.

    Simply let cool then freeze in an airtight container. It's best to separate pancakes with parchment or wax paper so they don't stick together.

    Or freeze on a baking sheet lined with parchment paper. Once the pancakes are frozen, transfer them to a zip-top freezer bag.

    This recipe serves one but can be easily multiplied to make more.

    Recipe Tips

    *You can make multiple servings of protein pancakes. Simply increase the amounts as needed and cook.

    Variations

    Eggs: A store-bought egg substitute can be used. However, these protein pancakes do not work with flax eggs or using peanut butter in place of the eggs.

    How to Make Allergy-Friendly

    These are already gluten-free, soy-free, and nut-free. Be sure to use gluten-free oats if needed.

    I like to make a lot of protein pancakes on a Sunday or Monday and refrigerate or freeze the leftovers. Just reheat them in the microwave for 1 minute and you have a delicious, healthy breakfast that everyone will enjoy!

    I actually think it's easier to make more than one serving of the protein pancakes and this recipe is easily doubled, quadrupled, etc.

    How to make the best easy flourless, fluffy Protein Pancakes without protein powder that are great for meal prep and can be frozen.

    Ingredients

    • ยผ cup oats regular or quick, not steel cut or instant
    • 1 large egg
    • ยผ cup cottage cheese
    • โ…› teaspoon baking powder
    • โ…› teaspoon vanilla extract

    Instructions

    • Add all of the ingredients to a food processor or blender. Blend until completely combined and smooth. Let sit for at least 5 minutes.
    • Heat a large non-stick skillet or griddle over medium heat.
    • Add pancake batter to pan {it makes about two regular sized pancakes}. Cook for about 3-4 minutes or until tiny bubbles form on the top of the pancake.
    • Flip and cook another 2-4 minutes until done.
    • Serve with a little real maple syrup and/or butter. Enjoy!

      Amazing! I tried these in the past and they always stuck to the pan; by using the blender it REALLY makes a difference with the batter! They taste GREAT. I will definitely use this recipe for years to come! Thanks!

      If you truly want these to be gluten-free, you need to make sure you're using certified gluten-free oats. While oats don't naturally contain gluten, they are often grown and/or harvested in close proximity with wheat and end up contaminated. As someone with Celiac Disease, I must be very careful and can say that I will know if I've eaten most oats - Quaker will give me symptoms of gluten; but something like Bob's Red Mill Certified Gluten-Free Oats will be fine.

      I just tend to cringe at any recipe that claims to be gluten-free but calls for oats; while someone on a fad diet trying to be gluten-free might not notice a thing here; those of us with Celiac will likely get sick from many different oats on the market today. ๐Ÿ™‚

        You're absolutely right!
        I have a note about that in the post and on my disclosure page. Tons of foods have gluten as well as other common allergens in them from the processing and/or packaging of the item. That's why it's so important for people to read labels, ingredients lists, and any allergen warnings.

      These look incredible and so healthy. I can't wait to make them this weekend! I wanted to ask if you've ever tried them with a chia egg (1 tbsp chia seeds + 3 tbsp water) for an egg free version? Since they hold more water than flax seeds they might work. Cheers!

      I was very impressed with these! I, like your sister, was hesitant to try them... I'm a huge pancake person and never would have thought to use cottage cheese in the batter. Since I like pancakes so much, and they're not always the healthiest choice, I'm always on the lookout for recipes that are healthier so I can eat them once or twice (or four) times a week ๐Ÿ™‚ I loved the smooth texture and the fluffiness! I also got a "french-toast-y" taste (however, that may be because I added a sprinkle of cinnamon to the batter). Either way, these were delicious, and I think I may have found a new go-to recipe! Thank you!

      These are the best! I am obsessed with them and eat them everyday- so easy to make in big batches and freeze. I love that they don't taste like "healthy" pancakes, they are so delicious. I seriously can't get enough!!
