    How to make the best easy flourless protein pancakes with oats and cottage cheese. These fluffy Protein Pancakes keep you full all morning and are great for meal prep because you can make ahead of time to reheat during the week or freeze for leftovers. This simple, gluten free recipe is one of my absolute favorite healthy breakfasts with only a few ingredients.

    September is National Breakfast Month.

    And I believe breakfast is an extremely important meal; gotta get some nutrients in your body to give you energy for the day.

    Even though I already have some breakfast recipes posted and I talk about breakfast almost once a week, I decided to give more breakfast recipes in honor of National Breakfast Month and to entice you to actually make breakfast and eat it.

    So this whole week will be dedicated to breakfast recipes.

    For today, I have a protein pancake recipe. It seems a little weird, I know. But they taste like real pancakes, not healthy pancakes.

    When I was home the other week, I made my sister try them. She's a serious pancake person and I could totally tell that she did not want to try these. But she did, and she was pleasantly surprised.

    I think you will be too!

    Plus, they are high in protein {hence the name "protein pancakes"}, gluten-free {make sure you use gluten-free oats}, 100% whole grain, and for the whole serving they are only 200 calories, 16g carbohydrates, 2g fiber, and 14g protein.

    If you want to use egg substitute you can. I just always have eggs around, so that's what I use.

    I like to make a lot of the protein pancakes on a Sunday or Monday and refrigerate or freeze the leftovers. Just reheat them in the microwave for 1 minute and you have a delicious, healthy breakfast that everyone will enjoy!

    I actually think it's easier to make more than one serving of the protein pancakes and this recipe is easily doubled, quadrupled, etc.

    I promise you that you need these protein pancakes in your life. They are amazing!

    Ingredients

    • 1/4 cup oats regular or quick, not steel cut or instant
    • 1 large egg or 1/4 cup egg substitute
    • 1/4 cup cottage cheese
    • 1/8 teaspoon baking powder
    • 1 teaspoon honey optional

    Instructions

    • Add all of the ingredients to a food processor or blender. Blend until completely combined and smooth. Let sit for at least 5 minutes.
    • Heat a large non-stick skillet or griddle over medium heat.
    • Add pancake batter to pan {it makes about two regular sized pancakes}. Cook for about 3-4 minutes or until tiny bubbles form on the top of the pancake.
    • Flip and cook another 2-4 minutes until done.
    • Serve with a little real maple syrup and/or a small pat of butter. Enjoy!

    Notes

    *I tried this with a flax egg in place of the egg. It didn't really work.

      How many pancakes are there in one serving? (213 calories) I didn't really understand.

        The entire recipe is one serving. Usually that makes about 2 pancakes. Hope that helps!

      cottage cheese ..... ugh do you taste that? I can not touch cottage cheese as I barely can look at it lol.
      Did yogurt work? Greek or normal?

        Haha! I hear ya! I don't like cottage cheese either, but you cannot taste it at all in the recipe!! Everyone who has tried these is SHOCKED they are made with cottage cheese.
        That being said, I have not tried them with yogurt. If you were to try, I'd suggest using Greek yogurt since it is thicker. Good luck! 🙂
