A dessert dip that's great with apples or served over toast for a festive fall breakfast
Well, it's the day before Halloween; do you know what you're going to be yet?
I don't either.
I have some ideas but I don't have every piece to the costume that I need in my costume box. Which means I'll have to go to the store to make it perfect. Drats.
However, I do have tons of options for Halloween related snacks, desserts, and meals.

Pumpkin Butter? Yes, pumpkin butter. It's fantastic. It's addicting. It's an absolute must make!
And it's fabulously simple. No chopping, pureeing, whatevering. You just throw everything into a saucepan and let simmer for about 30 minutes and it's ready.
{Note: you want to keep the mixture almost completely covered while simmering because it spatters a lot. But you want it to reduce so leave a little crack for the steam to escape.}
It keeps in the fridge about a week. That is, if you can keep it around that long.
I really like it with apple slices, especially tart green apples. They contrast perfectly with the sweet pumpkin butter.
You could also put this on toast for a fun and festive fall breakfast!
P.S. That dip next to the pumpkin butter in the photos is brownie batter dip, and you need that asap!

Pumpkin Butter
Ingredients
- 15 ounce can pumpkin puree not pumpkin pie mix
- ยพ cup 100% apple juice
- ยฝ cup light brown sugar
- 1 ยผ teaspoon cinnamon
- ยผ teaspoon nutmeg
- ยผ teaspoon ginger
- โ teaspoon cloves
- โ teaspoon salt
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Whisk together the pumpkin, apple juice, brown sugar, cinnamon, nutmeg, ginger, cloves, and salt in a medium saucepan.
- Bring to a low boil over medium heat. Partially cover and reduce heat to medium-low to simmer. Stir occasionally. {Be careful because the mixture bubbles and splatters a lot!}
- Once it has reduced & thickened {takes about 30 to 35 minutes}, taste and adjust seasoning if needed.
- Remove from heat, and add lemon juice and vanilla extract. Let cool and serve with apple slices, on toast, etc.
