The cute little baked "doughnut holes" are full of pumpkin flavor and hard to resist. Just try to stop after eating one...
Holy moly these are addicting. You can probably chalk that up to the sugar in them. Or maybe their cuteness. Probably both.
Either way, I can't stop. I made them last night and ate six {!!} before dinner.
Don't do what I did.
Make them after dinner and only have, say, two or maybe three... Then put them away {in the refrigerator} and take them somewhere tomorrow.
Get them out of your house, far far away from your sight and your cinnamon sugar crusted fingers.
While these aren't fried like regular doughnuts holes {they're baked}, they aren't healthy.
I'm not sure you can really call these doughnut holes, but for the sake of a name, I am dubbing them doughnut holes.
Don't like that? You can call them mini muffins...whatever.
Honestly, I don't care what you call them; just make them.

Pumpkin Doughnut Holes
Ingredients
For the doughnut holes
- 1 ยพ cup white whole wheat flour or whole grain flour
- 2 teaspoon baking powder
- ยฝ teaspoon salt
- 1.5 teaspoon cinnamon
- ยฝ teaspoon ground nutmeg
- ยฝ teaspoon ground ginger
- โ teaspoon cloves
- ยผ cup plain Greek yogurt
- 4 teaspoon canola oil
- ยพ cup pumpkin puree not pumpkin pie filling
- ยฝ cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- ยฝ cup 2% milk
For the topping
- ยผ cup butter
- 6 tablespoon sugar
- 1 tablespoon cinnamon
Instructions
- Preheat oven to 350°F. Lightly grease a mini muffin tin. Set aside.
- In a medium bowl, whisk together flour and next 6 ingredients (to cloves).
- In a large bowl, whisk together the Greek yogurt, canola oil, pumpkin, brown sugar, egg, vanilla extract, and milk.
- Stir the flour mixture into the Greek yogurt-pumpkin mixture. Only stir until it's just combined; do not over-mix.
- Scoop batter into mini-muffin tin - about 2 tablespoon batter in each.
- Bake for 10-12 minutes, until they are slightly golden and aren't mushy when you lightly touch them.
- While they are baking, melt the butter. In a small bowl, stir together the 6 tablespoon sugar and 1 tablespoon cinnamon. Set aside.
- When they come out of the oven, transfer about half of the "doughnut holes" to a large bowl {with a lid} or a brown paper bag or large zip-top bag.
- Pour some butter over them, gently shake to coat all doughnut holes with butter. Then sprinkle on about 5 or 6 spoonfuls of cinnamon-sugar. Shake to coat. Transfer coated doughnut holes to plate or cooling rack.
- Repeat with remaining doughnut holes. Try not to eat all 32 at once. Keep them covered in the refrigerator.
Notes
Here's a fun fact: If you made this pumpkin bread, then you will have exactly the right amount leftover to make these pumpkin doughnut holes ๐

Ooh! What a fantastic recipe! I just printed this and the pumpkin bread recipe! I always tend to go for the baby donuts instead of the regular ones...prolly bc I think I'm making a better choice...but who am I kidding? I end up eating like a dozen...at that point, eating a whole donut might've been a smarter move. But anything mini tastes better ;).
I'm going to bake these for my friend who will be defending her thesis in couple of weeks! She was thinking of something to bake for everyone, and I'm going to surprise her with these!
